This warm roast veggie salad is a brilliant and easy vegan air fryer recipe! I needed to use up some fresh beetroot, so I decided to roast them off with sweet potatoes and red onions, and serve them with mixed grains to create a tasty salad that is easy enough for mid-week cooking, but also impressive enough to cook for friends. I'll also show you how to make a super simple yet flavour-packed maple vinaigrette; spicy, sweet and tangy. To add crunch to the dish, I toasted some walnuts and pine nuts, and you'll learn how to turn vegan cheese into a crispy tuile.
I used quinoa, freekeh; a popular Levantine grain of roasted durum wheat, amaranth; an ancient pseudo-grain, and giant couscous; little bouncy balls made with wheat flour. I opted for a combination to give different textures, but you can use just one, or go for things like rice, pearl barley, or even pasta

Warm Roast Veggies Salad Ingredients:
1 very large Sweet Potato
1 bulb Garlic
2 large Red Onions
1 tbl Fresh Thyme (minced)
1 tbl Extra Virgin Olive Oil
½ tsp Black Pepper
¼ tsp Salt
4 medium Fresh Beetroot
90g (½ cup) Freekeh (dry weight)
65g (⅓ cup) Amaranth (dry weight)
100g (½ cup) Quinoa (dry weight)
200g (1 cup) Giant Couscous (dry weight)
Maple Vinaigrette Ingredients: (I'd double these quantities as I didn't have enough for the quantity of veg and grains)
½ tsp Coriander Seeds
½ tsp Cumin Seeds
½ tsp Fennel Seeds
½ tsp Caraway Seeds
¼ tsp Black Pepper
Pinch of Salt & Pepper (¼ tsp each or so)
1 tbl Red Wine Vinegar
½ tsp Maple Syrup
1 tbl Pumpkin Seed Oil

I’m a vegan that loves animal products, but hates what’s involved; so I’ve dived headfirst into a rabbit hole of different plant-based textures and flavours. These are often the 1st time that I’ve tried a recipe, and I’ll talk you through why I’m using the ingredients and what I think happened when things go wrong.
