WATERMELON SALAD
8-10 cups cubed watermelon, 1 inch cubes.
2 cups fresh Blueberries
1/2 cup Feta Cheese
DRESSING
2 Tablespoons Honey
2 Tablespoons Olive Oil
Juice of one Lime
1/2 teaspoon salt
Chopped Fresh Mint ( 4 leaves)
Chopped Basil ( 1-2 leaves)
LETS MAKE IT-
To a large bowl, add the watermelon, blueberries and feta cheese. In a small jar, combine the honey, olive oil, lime juice and salt. Whisk to combine. Pour over the salad ingredients and toss. Add the fresh mint and basil to the top. Serve.
Can be covered and chilled 2 hours before serving. Store leftovers in a covered container in the refrigerator.
