Hey Dimpie Your comments are being taken to heart. We have been looking into new equipment. Better camera and better sound. We are actually using a wimpy little flip camera. This camera has close to zero settings its full auto all the time apparently. Those issues have been driving me nuts when I watch the videos for editing. But we are both two busy guys with a limited budget and just trying to have fun. Most of the money goes back into the beers. But we'll hopefully have a new camera soon!

Couldn't you just use a Britta filter to remove chlorides amongst other additives from tap water. Here in the UK we have high mineral content due to natural sources but also high sterilising agents such as chlorides and fluorides which mess with the fermentation and leave disgusting after tastes. I've use campden tablets before but seriously just considering filtration and pasteurisation over sterilisation. Whats your thoughts.

Hi Thomas - I brew with filtered water out of my tap, using a filter of a recreational vehicle. It fits nicely on the faucet outside my house and the water tastes notably different coming out of the filter. Now, I still use a campden tablet because I don't think it filters out all the chlorine. Just my two cents. - John

Hey great video! I was making a strawberry blonde and everything went well during primary fermentation. At the time I didn't have another carboy on hand so I thought to just add the frozen strawberries I bought straight into the primary and add one Camden tablet per gallon so the yeast in the primary wouldn't ferment and change the character of the strawberry addition. A day after adding the tablet my fermentation fridge smelt completely like sulfur and rotten egg (which wasn't surprising as it is potassium metabisulfite ie. it contains sulfur somewhere in there), but after that the beer went sour as if it had an infection from something wild. As I understand it I should be able to add frozen strawberries to the beer without fear of infection so long as I sanitize the outside of the bag and the scissors I used to cut with, just as one would when opening a package of yeast, but this happened. Is what went wrong due to The Camden tablet reacting with the yeast? I don't know if you might have any insight? All said and done I probably should have just cleaned another fermenter and purged it with CO2 rather than doing secondary fermentation with fruit in the primary carboy. Any thoughts would help.

Hey Matthew - not a timely comment but I have had refermentation with frozen berries before. Fruit purees are best format for additions to beer since they have been pasteurized. Not sure what happened with the campden tablet but try canned strawberry puree for next time. - John

The name Campden tablet comes from the town of Chipping Campden in Gloucestershire, England, where the original solution was developed in the 1920s by a sir george chegwell campden, also known for inventing skirting board ladders and tartan paint. serlysly tho u not crushing ur campden? takes like 50 years to disolve. campden is 100 emoji

You can buy metabisulfite powder as well if you can't get the tablets. Tablets are easy and require no premeasuring. If you buy powder you're looking for potassium version not sodium. Cheers! -Mike

Hi Guys, what about an update to this regarding using SMB/PMB to stabilise and extend the life of kegged NEIPA (or use citric acid or using SMB/PMB + citric acid). I’ve started to CO2 flush kegs of a 3g solution of SMB (instead of Starsan) in my oxygen free transfers with the assumption there will be some residue of SMB left in the keg (Brulosophy suggests 0.3g per 19L of beer). Do my NEIPA’s stay fresher longer?...maybe. Whaddya think? Cheers, Guys.

Can I use these tablets for sterilizing apple juice? Will it effect the juice negatively ? Does it extend shelf life and is it dangerous to drink it ? Does it effect the taste ?
@BrewDudes

Hi Sven - the tablet won't sterilize apple juice but it will impede the growth of wild yeast. It shouldn't affect the juice negatively. I'm not sure about the extension of shelf life but it doesn't affect taste. Some people have a sensitivity to sulfites but it is not dangerous to drink. - John

Crumbs... I just popped in to talk about Campden tablets! As a keen cider maker the ‘Holy Grail’ for me is trying to get just a little bit of secondary fermentation in the bottle whilst leaving enough back sweetening to balance the acidity. My cider’s are often too dry because I bottle too late or too fizzy because I’m chancing my luck for the yeast activity in the bottle to stop and leave some sweetness. I’ve been playing around a little with Campden tablets as a means of suppressing the yeast activity to have a bit more control. As yet without much success but I’m sure there’s something in it if I experiment enough! Anyway, I’m enjoying the videos despite how well polished they might be. Thumbs up from me! Cheers for now. Alan.

Thanks Alan. As I said earlier these two amateurs are working on improving things, but life as its priorities. I agree getting that perfect balance is nice when it happens. But its also tough to do as a home brewer. Making the same batch over and over again leads to a predictibility in the fermentation so a pro might be able to add tablets, stabilize and bottle at just the right time. Tough to do on the home scale.

i told someone i want to transfer my wine from after 6 months to a year in to other bottles and i was worried about oxygen getting to it because the fermentation is done ya know and someone told me i should just use campden tablets like everyone else so now im confused how does campden tablets prevent oxygen from getting to your wine?
@BrewDudes
3 жыл бұрын
Campden is metabisulfite which has antioxidative properties. It reacts with the oxygen faster that the oxygen reacts with wine/beer compounds that are prone to staling. But this isn't an excuse to be sloppy with oxygen. You're limited by the amount of metabisulfite you have in the product and when it reacts it is spent. Adding too much of it effects the flavor on its own. Its a small amount of insurance but not much. And some people are sensitive to sulfite and don't want it in their beverages. Cheers! -Mike

So when should I add potassium metabisulphite in fermenter?
@BrewDudes
4 жыл бұрын
Depends on what you are trying to do. You want to stave off renewed fermentation add it when the primary ferment is done. If you're trying to use it for anti oxidation properties add it prior to packaging; but if bottle conditioning you might have trouble getting referent. If you are using it to deal with chlorine in the water. Fill your kettle with your brewing water and add it prior to brewing. Let it sit for 10mins and you're good to go. -Mike

Do you really have to add the Campden Tablet 36 hours before the brew session for there to be an impact on chlorine reduction? I started adding Campden to my coffee every morning and I think I get a better tasting coffee.

Does this mean that using it prior to bottling will in fact prevent natural carbonation of the yeast? Does it kill the yeast and inhabits yeast refermentation and conditioning in the bottle?

Yes, if you use it prior to bottling, you will not be able to naturally carbonate in the bottle.
