Them cheeses look delicious! I mainly make hot sauces and my most popular one amongst my friends is the fermented one I learns from your channel way back when, so thank you so much for that! Also make flakes and chili garlic oil. Learned a lot from you my friend and appreciate all you share and the encouragement you always spread through your videos!

I make pepper jerky by drying roasted red bell peppers until leathery. Doesn't sound like much, but it's my favorite food on earth.

I make pepper flakes & powders, but I never thought to mix them up over time. This makes a lot of sense, and I actually do this with herbs from around my yard so my "garden herb blend" is ever-changing. I don't grow nearly as many peppers as you, but I definitely freeze & vacuum seal lots of them in portions that I can easily incorporate into various recipes. Larger chilies I like to roast & peel before hand. +1 for hot honey. It's so tasty on so many things. Similarly, if you're not making Cowboy Candy you're seriously missing out.

If you have a dehydrator for pepper flakes, then I recommend making beef jerky with your hot sauces! 🤤

Glaring omission: nuoc cham. You know a lot of your peppers go into making nuoc cham since we eat so much of it in everything! LOL! But seriously, that platter of nem chua had me salivating. It's been so long since I've had it and I miss it. Mmmm!!!

Yes!! I’ve recently became addicted to cucumber kimchi…. Can you tell me which pepper I can grow in the US that would be a substitute for the Gochugaru? Lol Man I remember the google plus community too. I’m just hearing you mention the bourbon I’ve picked up a penance for bourbon recently as well so I definitely want to try to make some peppers with that… I think I’m going to either grow via containers or else there’s a small strip of land behind my apartment and I’m going to see if how much it would cost for me to actually get that leveled🤔

I love making powder, but I smoke a lot of them for powder. I also make fire cider, spicy vinegar, and refrigerator spicy pickles. Freezing them doesn't work for my hot sauce since it's fermented. Making mushroom jerky is the best, marinates much faster then beef or venison. I like using wild oysters for that.

@@amburkajama same seasonings, spices, and sauces as beef or deer just use sliced mushrooms(wild foraged are best here).I usually do a soy, Worcestershire, garlic, onion powder, maybe a bit of cayenne, dried chilis, black pepper. Can be adjusted add brown sugar for more of a teriyaki, or pineapple juice and vinegar for sweet and sour. Don't soak for 24-48 like beef though. Portabella mushrooms for instance I found soaks up the marinade like a sponge and after about 20 minutes it gets to salty. You can taste them and tell when they are ready, just remember the flavor will concentrate down.

When I make my base for my peppersauce I usually sautee some yellow onion then I add cider vinegar as well as a can of peaches and cook that down to a nice compote then adding the peppers that I want to get a nice balance Savory sweet heat sauce going

Although it requires a ton of sugar, pepper jellies are delicious. I usually use Jalapeno, but Habanero works well too.

Awesome video (as always). Gave me a couple of ideas. What is the name of the cured fermented Vietnamese meat? I did try my hand at infused vodka, but it didn't last long enough for the peppers to go all white 😊For the whisky hot sauce. Is it fermented or not, and when do you add the whiskey? Also, those cheeses look amazing! You should make a tasting video on them for sure! 😁

We call that pork "nam chua" in Cambodia.

Love hot sauce infused with whiskey but I’m sorry, that’s a crime to use something as high quality as Woodford Reserve. I’m sure Wild Turkey would do just fine at a fraction of the cost.

When your from Kentucky the bar gets set kinda high for personal preference but yeah any bourbon would be good and like you said at a fraction of the cost.
