Lemon Poppy Seed Muffins recipe (adapted from www.rhiansrecipes.com/gluten-... )
1/4 cup coconut oil
3/4 cup plant-based milk
1/2 cup lemon juice
2 tbsp lemon zest
1/2 cup maple syrup
1 tsp vanilla extract
Pinch of salt
3 tbsp poppy seeds
1 1/4 cups almond flour
1 1/4 cups gluten-free flour
2 tsp baking powder
1/4 tsp baking soda
*Bake at 350 F for 15-20 minutes. If using a mini muffin tray, bake for a bit less.
Steak Salad w/ Dijon Balsamic Dressing recipe (adapted from diethood.com/steak-salad-dijo... )
Dressing
1/3 cup extra virgin olive oil
3 tbsp balsamic vinegar
1 lemon, juiced
1 heaping tbsp dijon mustard
1/2 tsp dried oregano
1/2 tsp dried thyme
Salt and pepper to taste
Steak
2 (4 oz) N.Y. strip steaks
2 tbsp butter
Salad
6 cups romaine lettuce or mixed greens
1/2 cup red onions, thinly slices
2 avocados, thinly sliced
2 cups grape tomatoes, halved
1 English cucumber, quartered
2 cups roasted sweet potatoes, cubed
