I'm sad to say I was vegetarian for 25 years before going vegan (d'oh) but the thing that surprised me the most was that I stopped craving cheese! I assumed my vegan life would be daily torture and deprivation. But once you give dairy up, it seems greasy and weird, and I've totally lost any desire to eat it. Love your videos!

The cultural element is so under-discussed! I'm a vegan Arab and I was basically eating chicken, rice, sandwiches, and salads for every meal. Now that I'm vegan, I've started actually exploring Arab cooking and have taken the time to learn how to best cook the meals my parents always made.

Thank you for this. I am 69 years old and have been a vegetarian since 1972. Things have come a LONG way since then for those of us who don't want to eat animals. It was particularly rough in the midwest, where I live. Today, there are way more choices and more restaurants who accommodate us, and also fewer questions, fewer "jokes", fewer people getting defensive about their own eating choices. I remember answering one woman who asked "why" by telling her I didn't want to kill animals. Her response was "But, God ate animals."..... There are also WAY more cookbooks. The first one I remember is Ten Talents. I remember some good things, but also some pretty awful stuff too. Like soy bean loaf made with whole soy beans. Then Anna Thomas came on the scene with her Vegetarian Epicure books. She took vegetarian cooking to a whole new level, but looking back on them, they were super loaded with things like butter, cheese, cream to add umami. I am still a vegetarian, but kind of a vegan wannabe. I love your channel and I have your Instant Pot cookbook. It's a well used favorite. Thanks again, Nisha.

Hi Nisha! I am currently a Physician Assistant student and have been on a path of discovery of how and why vegan diets seem to be able to reduce the risk Type II diabetes and the severity of that and other chronic ailments in folks. You mention vegan versions of Mexican and Japanese and Indian foods, all of which are great and I enjoy, but I was raised in the Mennonite tradition, and I have found few vegan versions of traditional Pennsylvania Dutch cooking, so I’m trying to make my own! So far I’ve managed to figure out a vegan version of the traditional potato dinner roll, chicken pot pie, meatloaf, and mincemeat pie, but many dishes still present challenges, for example liver wurst, sauerbraten, or head cheese. I have learned much from your videos and use what I learned in my own culinary experiments, as well as making your dishes pretty much exactly as your recipes instruct. When my young adult daughter went vegan two years ago, I pretty much reacted as your parents do in this video: skeptically, critically, and negatively. I had no idea how to cook a vegan meal; I pretty much cook l lacto-ovo vegetarian and occasionally have fish or chicken, but I was kind of stuck in a cooking rut: pasta+salad, rinse, repeat. I enjoy cooking new recipes and healthy eating, so I went looking for ideas. I found your website, which is now my go-to when I want a delicious meal idea even when my daughter is not around. You'll see all these people on the "standard American diet" who are sickly and taking Rx meds by the truck load.....but you will be healthy and at your ideal weight and you'll have more energy than you know what to do with. Just make sure you keep a check on your Omega 3 index, & vitamin d & b12 levels. Make sure you include, in your daily meal plans, 1TBSP each ground flaxseed, chia seed, sesame seeds; at least an ounce of walnuts (or any other nuts you like, alternating them); mushrooms; onions; beans; berries; green leafy vegetables. Take a good quality EPA/DHA (Omega 3) supplement, zinc supplement, B12 vitamin supplement. Also a liposomal vitamin c . You'll do great things, I just know it. Peace 🕊️

It was very rare, and there was little to no support for vegetarianism or vegans. I wouldn't even tell people i didn't know, so as to avoid the strong reactions and judgment - because I would often get a very strong reaction, as so many people thought "only weirdos do that" - when in reality, people that don't eat meat are some of the healthiest people I know. ....funny thing is that at my 30 year high school reunion, I was just about the only one that had the same lean, athletic build that I had in high school.

Vegetarian for 10 years, vegan for 6. Your channel is a great resource! You’ve included some essential tips here for new and veteran vegans alike! Would you consider making a few oil-free recipes? I usually try and modify your recipes to have less oil but sometimes it’s not very possible. You have some of the highest quality Vegan cooking videos on KZitem, absolutely in love with a number of meals you’ve demonstrated.

Since discovering my husband’s high intolerance to additives (sulfites in particular) as well as dairy over ten years ago I started cooking a lot, I mean A LOT more and using only fresh ingredients. I can relate to a lot of what you said: the pointlessness of trying to convince people additives are bad for their health (ours is much better now than when we were in our fifties!!!), reading labels ad nauseam, getting « regular », the importance of having nuts in the pantry for snacking, planning ahead especially when traveling… We are not vegan but I cook meatless meals on a regular basis and have successfully tried some of your recipes. So thank you for sharing your experience and your creativity.

I Agree. I’m very rarely hungry between meals, I save tons of money (and rarely procuce rubbish, just top up my garden compost!), I never get a bellyache or heart burn… I just cannot believe how easy it was to go vegan (I am dairy intolerant so my only bad craving was eggs). It was just an afternoon reading vegetarian and vegan posts on Pinterest about cruelty free life…. the next day I was a vegetarian. I later started to try veganism two days per week, then three days per week... I was shocked at how long I had avoided thinking about the consequences of my selfish eating habits. I truly wish I had opened my eyes earlier. I feel terrible about my contribution to the suffering of animals and the destruction of our beautiful planet. Thank you for your tips. Your recipes are wonderfully delicious. I cook one to three of your recepies every week.

Your point about eating more exciting and varied food once going vegan is so completely true! I used to hate cooking and would only want to eat the same meals I always had. Now I'm so adventurous with my cooking and my spouse and I try new vegan recipes every week.

My relationship with food also improved when i went vegan, i also felt like i became a more intuitive eater and am able to look break down my cravings and figure out what my body is telling me i need. I recognize food now as a nourishment and at this point don’t even enjoy conventional processed snacks (if they’re even vegan) because i know what they do to my body and don’t want to feel like crap. I really love ur videos and have been watching them basically ever since I went vegan and have learned so much! I really appreciate all the videos and recipes you do and love ur cook book. Thank you ❤

Oh Nisha! I love your sense of humour ❤️❤️❤️. I went vegan about 7 years ago. I had trouble explaining too. Still do. I’ve learnt to recognise the “attackers” from the “just curious” and “how can I do this” people. And I’ve curated different responses for each group. I have trouble when I travel though. Indian food is surprisingly filled with lots of dairy in the cooking stage and I find it harder when I travel. Oh and the gut issues? Bang on! I’ve had trouble as long as I can remember, and going vegan fixed it in weeks!!! If for nothing, just for the gut, people should try going vegan!

Nice video. I found your channel a few weeks ago looking for Naan bread, which I make almost every week. It is so good! A few years ago I was vegan for about 10 months along with my adult daughter. I stopped along with her because she was not doing very well on vegan diet. Now I am having my inner voice calling me to go vegan again. I have tried many of your recipes and all have been really tasty. Can't wait to try more, especially the Indian ones. I don't know that I will go full-on vegan again...but just maybe.

I’m almost at my 1 yr vegan anniversary. The most surprising things for me in my journey are the variety of foods I eat now. My pantry is full of new & different items and I use so many different spices & seasonings. The last surprising thing is how eating vegan has developed my creativity in the kitchen !

Could add #16 -going vegan increased my social circle/life. So many vegan groups to join! Farm Animal Sanctuary Sunday, Vegan Potluck Game Get-together Night, Vegans Helping Vegans, Vegan Comic Book Club, Vegan women's book club, vegan hikers, vegan bikers, vegan runners, vegan debate team, vegan prom, vegan singles, vegan families, fat vegans and 50+ vegans and more. Also Facebook group pages. So vegans are fun. I usually start there when I tell people who are questioning me about my vegan lifestyle. I think there's an underlying assumption that we're abnormal loners and less fun to hang out with. Anyway as a 10 year plus vegan I didn't think I was going to learn new stuff to apply to myself, but I was wrong. This is a great tutorial even for longer term vegans. I subscribed.

Going vegan was one of the best choices i made in my life and starting tomorrow i will once again attempt to go Vegan. Thank you for motivating me to make this choice. PS: you and your videos rock, i learned alot of tips from you while i was vegan and still making newbie mistakes. Edit: i just realized i made this choice while munching on dark chocolate with whey protein, I'll start after this bar❤️

yeah man, go for it. Glad you don't give up and try again. I think we all did and maybe do some 'mistakes' in our diet, since it's never really been teached, except if your parents are good cooks and know a lot about it. Maybe a Vegan cookbook with general info about nutrition on a vegan diet could help you out. It helped me a ton and I was amazed about how little I actually know about all of this and where my mistakes were.😂 Wish you a happy start 😘✌You can do it😊

8:49 One of the most surprising things for me heading toward being mostly vegan was the amount of recipes out there that make cooking so hard!! 😅 I think it's unintentional because hard, long, and complicated recipes turn people away and that's absolutely not the goal. It does make it kind of tough to find really good spoonie vegan recipes and it takes a lot of work to collect them into one place.

Great points! Also this is obvs anecdotal (I'd love to see a study conducted) but I feel like our palates change too. When certain meat dishes are cooking, it smells great. But if I even think about eating it, the texture seems very off-putting. Sounds weird but initially I went vegan for a month to challenge myself. At the end of the month I ordered a large pizza and bucket of KFC. I was shocked that those things tasted WAY better in my mind. So I tried another month, and binged at the end. Same feeling: underwhelmed. Lol after that, the rest is history. I'm glad you talk about dairy though, meat was easy to give up (shockingly) but dairy is much trickier imo.

@@GabrielCazorlaPersson1 Thanks for the reply, I'll search to see if I can find those studies. Haha yea and I'm very aware of diary and its relationship with the blood brain barrier, definitely adds to the obstacle. That being said, for me I think it's simple accessibility and convenience. I found going from dairy to soy milk was easy (in fact when I tried regular milk later, it was almost tasteless. Tasted like cold, heavy water lol). Now if every doughnut shop and Dairy Queen had vegan substitutes for their signature products.... game over.

"Sounds weird but initially I went vegan for a month to challenge myself. At the end of the month I ordered a large pizza and bucket of KFC. I was shocked that those things tasted WAY better in my mind" I had a similar experience. I had been plants and plants only for a couple of months. Then I back-slid and just had to have a Burger King breakfast croissant with ham, egg, and cheese. First bite in I thought I died and went to heaven. Second bite in I thought, 'Um....wait. I can see why I thought this was good but I don't need it ever again.' and then I threw the rest of it away. Any time I have backslid I come to the same conclusion which is either something doesn't taste good anymore (or even if I didn't back-slide I see foods I used to go well out of my way to get just don't even appeal to me anymore) or even makes me feel sick. A place that I used to go to all to often has seasonal pancakes - pumpkin of course in the fall. Not having had them for years I finally broke and went and had some. About the third bite my stomach was grumbling and rolling around. My tongue said ' this is awesome' and my gut and brain said 'if you eat the rest of this you will regret it' so I wasted more food, paid, left the rest and left. I still back-slide but now it is maybe one or two times per year. Your tastes change so much that what used to taste good just loses appeal and then they don't lose appeal, for me, just caving in and tasting something again immediately puts it on my 'never again' list. The struggle is still real for me but so spread out that it is almost gone. For the most part when I see things I used to love my brain starts to whisper into my ear 'Self...I bet you could use one of your home-made smoothies about now...' and I get hyper focused on that like a 12 year-old lusting after an Oreo Blizzard. I just can't convince my wife that my smoothies taste so good to me that I prefer them over almost anything and I make them with lots of greens - even broccoli, and heart healthy spices like turmeric and cheyene. Sounds gross but my taste changed so much that I love it. Of course lots of fruits as well as some nuts and seeds to round out the flavors.

Off-topic: For those whose job/lifestyle involves a lot of typing, and who have ever suffered sore wrists, I highly recommend the keyboard Nisha is using at 0:46. The same one (Kinesis Freestyle 2) has saved my wrists for thousands of pages of writing. Your fingers will get used to this more natural wrist orientation in about a week, and they are usually available used at auction sites at reasonable prices. My only gripes have been with learning to avoid the Fn and Cntl buttons with my left pinky.

I agree with all of these, but I’m so glad your brought up the lack of stomach aches. I thought to live was to have a stomach ache, but since moving to a vegan diet I hardly ever have digestion issues. My blood work also improved after changing my diet, which felt like a victory to anyone that told me I couldn’t get enough protein without meat. Going vegan has increased the variety in my diet. I was a meat & potatoes girl with about ten basic recipes in my repertoire, all of which used some variety of the same 10-15 ingredients. Now I’m constantly trying new things and love foods I was once convinced I hated.

I found your channel a few months ago. I will likely never go completely vegan. I like eggs and cheese way to much. But.... Your recipes have definitely reduced the number of meat days I have by at least half. I love that your food is flavorful and exciting to eat. Also, they don't break the bank. All of the recipes I have tried have been amazing and I am looking forward to many more.

Hi, newbie here, I have made your red lentils recipe twice, love it. I am not a great cook, and I do need recipes to follow. I was inspired by your channel here, and by watching other vegans/vegetarians/plant-based videos that helped push me to a better eating lifestyle. I have been (fully) meatless for 12 days only, I know is nothing compared to so many people here, but coming from a Brazilian background, meat is on our plate 7 days a week. I am so happy to have found your channel, you are funny and inspirational. This is my choice to be plant driven person, it makes me feel better physically and mentally. I am a mom of three, a nurse, housewife that is conscious about what I put inside my body. When I told my mom that I was becoming vegan, she said: "what, for today only"... Sorry, I wrote a lot, your parents are funny too. :)

I agree wirh everything you said. I am vegan now for one year and my cholesterol dropped for 160 points and it is now at 220. (yes it was at 380 which is veeeeery bad). But i mostly agree with your point of mental health. I always struggled with eating, trying to eat „clean“ but it had always been boring and not satisfying so i ended up binging junk food at night. After 22 years of being alive i have the best relationship with food. I absolutely loove eating good food, i learned to love cooking and trying new things. I lost about 8kg body weight, i am more healthy than ever, more active, less sleepy therefore i found a new passion because i had so much more energy i started dancing and all these things changed my life. I always thought people exxagerate when they said going vegan changed there life but it is exactly like that. Thank you for sharing your knowledge and being a part of my journey ❤️
