So there’s obviously a lot more that we can say about our rationale/our situation, the pros and cons of the Zero COVID policy, the logistics of a US-China round trip (because what I said in the video was definitely a simplification), and so forth. I could absolutely write a novella-length comment on the topic, touching on the politics, the nightmare that our friends in Shanghai are living through, etc etc. But honestly… the whole situation just makes us sad, and dwelling on it all can put us in a pretty toxic headspace. So instead, a couple notes looking forward: 1. As I touched on in the video, a lot of the diaspora Chinese food in Southeast Asia is super fascinating… and those pathways are definitely something we’ll be wanting to check out. In Thailand in particular, there’s quite a bit of Teochew influence (a cuisine we’re rather familiar with, living here in Guangdong). We think that something that might be really cool would be to look at a Thai-Chinese and Mainland-Chinese version of the same dish, check out the similarities/differences, etc etc. Ditto with going down to the Straits, over to the Philippines… 2. Similarly, we’ll probably want to take a look at some of the minority cuisines in Northern Thailand and Laos, as there’s a *lot* of crossover with Yunnan cuisine. There’s that whole Dai/Shan/Tai Yai crossover, obviously, but there’s tons of stuff to check out in that whole Zomia region (a stretch of the world which probably has our favorite food, anywhere). 3. In particular, Dai cuisine is something that we’ve long wanted cover a bit more for a long time (COVID restrictions often got in the way of us going to the… border heavy… Yunnan province). So we’re really excited to be learning the Thai language right now, as if you know both Thai and Mandarin, you’re in a pretty decent position to be able to communicate (as different forms of Dai tend to have quite a bit of overlap with these languages). 4. Language, of course, is one of the reasons why we’re not overly comfortable with the idea of covering Thai dishes (name of our channel aside). The fact that Steph can read extensively through Chinese sources - modern, historical, and everywhere in between - is ultimately, we think, sort of our ‘advantage’ in delivering you recipes. Without that grounding in the language, I think our content would be on much shakier footing. Covering Chinese food without being based in China is going to be… harder. We’ve been continuously inspired here, daily, just by walking outside our doorstep. We can get ingredients from pretty much anywhere in this massive country with a quick snap of the Taobao fingers. But we’ve had this view of Chinese food - i.e. the view from inside of China - for so long that we’re actually kind of excited to see things from a different perspective (even if it means we have to give up our erjingtiao). There’s a lot of learning left to do. EDIT: Some of y'all have been asking about the cat. Unfortunately, he's getting up there in years, and international transit would be a bit risky for him, health wise. Luckily, we've got a friend of ours in Shenzhen (the same friend that's doing the Husa knife exporting, actually) that's a cat lover and is going to be taking him in these years that we're away.

If you ever plan on going to the Straits (or more southwards!) definitely don't forget check out the cities with big Chinese influences (Singapore, obviously, but also Penang, Medan, Singkawang, Bagansiapiapi, Pontianak, and Jakarta). The street food (and the overall tourism scene) of those places are definitely worth the travel. Also, if you ever need help in researching a dish, be it Thai-Chinese, Peranakan and so on, you'll find that more than a few of your fans (including me!) are more than eager to help you guys out for research, recipes etc... so just hit us up if you ever need some help!

Teochew food is a huge influence on Thai Chinese cuisine, I hope you get a chance to shine more of a light on it. It is a fantastic cuisine but because of its lack of time in the spotlight it has past been difficult for me to recreate Thai Chinese dishes without the ingredients that are central to them (as they don't sell them in either Thai or Chinese markets here in the US). The Chinese Olive being one particular example, I'm luckily able to source Teochew bean paste more easily nowadays though. Thailand is my second home (literally! we have a family home there) and I'm excited what you'll get to experience with the Chinese diaspora food there. I'd love to know more about it, since I'm not Chinese diaspora myself. The Bangkok Chinatown Yaowarat does have some incredible food. Within some kilometers of the airport there's also this fantastic unique Thai-Chinese fusion restaurant that I adore called "To Eat," one of my favorite restaurants in the world. I dunno if you'll even see this message but I at least think it's worth a try.

This is because Teochew diaspora also stopped in Bangkok. When I went over to Bangkok Chinatown, there are Teochew dishes and even language spoken though most of the language is lost. One very obvious Teochew dish is braised goose/duck. You see that, it is almost Teochew. In any case, CCD, enjoy your stay in Bangkok, do come down to Singapore or Malaysia to experience Nonya dishes; I'll let you research what they are.

It's not just Teochew. Hok, Hakka, and Cantonese contribute a lot too. Teochew just happen to be the largest group settled in Bangkok. In the South; for example, Hokkien (Fujian) are more influential.

YES! The restaurants in Korea that carry Jjajangmyeon (짜장면) and Jjamppong (짬뽕) are so good and relatively cheap. They're now an ingrained part of Korean cuisine similar to how Chinese take-out is in the U.S.

I heard to come into Thailand you have to test for COViD and then stay in a specific hotel for quarantine for two weeks and then test again and if it’s positive they make you go to hospital and pay and then leave? And I hear the testing is kind of suspicious. Like they want to squeeze that hospital stay. Has anyone had any fishy experience with trying to go to Thailand these days?

@@Curioinfinity there were testing rules but they have been done away with. Also the testing wasn’t‘sketchy’ but they were strict so even if you were asymptomatic you still had to be ‘hospitalized’. The people doing the test and the hospitals are not part of the same organization so they don’t make any money from you testing positive, but I suppose a hospital might. The government would make more money if you had spent your money traveling though which was their goal.

I can affirm how hard it is to re-enter China from the US. My best friend lives in Beijing and traveled home to the US in January for a 3 week visit. Sadly, it has been 4 months and she has not been able to return. She has clearance on flying in next week, but still has 3 weeks of isolated quarantine in Shanghai plus an additional 2-3 weeks of home quarantine in Beijing to look forward too. She’s been without her husband and dogs for this time and it has been financial and emotional suicide. Your plan to stick together is good, at least and you sound like you are open to some adventure so I’m sure it will be a great chapter in your life’s novel. Best of luck!

As someone who used to live in inner Bangkok area and now living in a greater Bangkok area, Bangkok has quite big street food scenes to explore. There are noodle franchises as well as independent stalls and northeastern (Isan) food stalls, for example. Of course, there are a lot of dishes that are influenced by Chinese cuisines. "Over the rice" dishes are quite a normal way of serving in many roadside restaurants. Have fun and have a good time in Bangkok, and be safe.

As a foreigner in China too, you've pretty much nailed my exact feelings. It really does suck tbh. You're exactly right, zero covid was pretty good for the first year or 2, it's got pretty heavy now, especially working at a school this whole year has had so many restrictions on even travelling out of the city. And there does not seem to be a logical end, and the situation in Shanghai, even though I'm not there, looks very troubling. That could easily happen in any city here. I'm lucky I have a wife here so I've got some support here but I am too wondering how long I can put up with not seeing my family, and whether I too should go back home or go to another country for a bit. All the best for your new adventure, hope this unfortunate situation passess soon.

Looking forward to the secrets of Khao Soi in Northern Thailand (kidding)!! Definitely looking forward to seeing videos about Thai variations of Chinese food from the diaspora - e.g., the Thai version of Hainanese chicken rice (Khao man gai). Also Malaysia (my birthplace) is next door. Lots of great Chinese food among the Chinese Malaysian diaspora which have incidentally absorved local flavours and ideas. I'd lvoe for you guys to explore Nyonya/Peranakan cuisine (one of my favourites) and the fusion of Chinese and Malay foods? All the best with the move!!

Travelling while you are young (relatively speaking) is a good idea. As your respective parents get older it gets to be more and more difficult to live abroad (i.e. away from both China and the US). My wife and I live in Japan now, but about 10 years ago we were able to live for 2 years, completely away from both families, in the UK. Especially for my wife, it was really good. We keep saying we want to do that again (maybe a year or so), but realistically with her mother getting older it's just not an option. I'm sure you'll have a great time!

I feel this so hard. I talked about moving abroad for a few years when I was a young adult and just never found the right timing. With my parents getting older (and the world having become significantly more complicated) I look back on my 20s and think how ridiculous my reasons were for not just doing it. Anyway, opportunities abound! I will make sure not to miss my local ones for the grief of losing my loftier ones :)

My ex wife is Chinese and she lives there, she hasn’t seen her 2 daughters for 2,5 years (they live in Europe with me). Zero COVID is cruel and with profound consequences. I’m not going to judge if it’s necessary or not, a pandemic in a Chinese context is a hugely complex issue, but yeah, I can relate. No end in sight:(

Living in Australia with my family in the US I definitely relate to this as we were also zero covid up until very recently. Being immunocompromised myself I have been incredibly grateful to be in a country that prioritized protectig me until I ciuld be vaccinated (reminder that not all immunosurpressed / immunocompromised people can be effectively vaccinated!) But it was really hard not being able to see my family for 2 years when I had expected to just be gone a semester for college. Especially when I got really sick on top of that. Australia has now gone the route of opening up and its been pretty scary how high the numbers go with omicron in a non-exposed (even though well vaccinated) population. So even if China opens up it might not be the worst idea to not be in the country when that omicron wave sweeps through. It was definitely a scary time for me and my husband given my health. All in all though it still has lead to way fewer deaths and chronic disabilities here in Australia and simular covid zero countries compared to the US and as a disabled household I cannot stress enough how important that is. Looking forward to seeing your videos wherever in the world you guys go!

I'm sorry, everything you've been saying in this video and what you're telling us is going on with your lives, it's all important-- but as a newish (less than a year, probably) follower of this channel, it's borderline bizarre (to my brain at least) hearing Chris's voice as not just a thing doing disembodied narration. I know it's not like he hides, or anything, I just never thought before about how much we normally see Step and hear Chris while seeing Steph. In any event, I agree with a couple of comments down the page-- I fully expect it's not just Chinese cuisine we'll be seeing, but I (and everyone else) look forward to whatever's next. As long as you guys are safe and happy.

I live in Shenzhen and I feel exactly the same. Zero COVID was a positive policy for some time, we could live with a higher degree of freedom than in the West (since the number of infections were low there was never curfews or restrictions in restaurants in China, for example). But, specially since Omicron hit the country, the number of burdens are increasing (right now I'm doing a PCR test every two days), and worst of all, it seems there's no exit plan in the horizon. IMHO the only realistic exit plan is to do what every other country has done in the world (full population vaccinated and slowly let the virus in), but it seems that's not what the Chinese government has in mind, at least, at the moment. In summary, all this is very draining and as time passes by more and more foreigners are leaving the country. Thailand is an awesome country, wish you all the best there!

I think it's due to the low elderly vaccination rates. Most likely once the vaccination rates for the elderly is higher, I think China could start relaxing the rules and slowly opening up.

Hey. I'm cool with this. Anything new is a new thing, after all. Now, what impressed me is that Chris has a face. No. Seriously. The thing is, since I started following this channel, and on any of the videos I've watched, Steph has a face, and body, and a mouth, and stuff like that. You know, a complete human being. But all I've ever seen of Chris are a couple of hands moving (expertly, mind you) over a wok, or sometimes a cutting board. And there's been a voice. Explaining how this or that is properly done, or how to do it as properly as possible when there's no way in hell I can get Ingredient X, maybe Ingredient Q will do, they think it works nicely... but until now, nary a face to connect with the hands. Or voice. And, Happily, it's a perfectly normal face to boot, because I had this demented idea that maybe why we never saw Chris from the mid-shoulders up was that he was actually a mutant bleeding skull-headed monstrosity that radiated death and chaos, but China said, "Well, sure, he's an unspeakable aberration of nature, but the guy can cook, so let's not call the military out on him yet". Nope, Chris is just some guy in China. What a relief. Enjoy wherever you wind up for the foreseeable future, and stay away from chemical plants and/or nuclear power stations, just in case.

Here, from Hefei, almost a decade. Testing PCR every two days since last week, and I followed every single rule (including during this 2 years since covid to not go another place within my city) and I saw everyone traveling inside China while I'm not. I was waiting until two months ago I decided to ask permission from my university to ask permission 2 months before the first three-day holidays to go anywhere outside of Hefei because I started to feel anxious about staying in the same place. I have time just on the long holidays (winter o summer) but I notice a better time to travel when everyone is working/at school. But no, Omicron decided to come in by irresponsible people and lying about by changing their phone number so they can't detect where this person came from (unfortunately from Shanghai) and came to Hefei after a week or going around until someone in the family got sick. Then I just gave up traveling (I did hold up so much time until I felt was right to travel but no). Now I'm planning to do a one-way trip to Canada, to immigrate there, prepare for the tests, documents, everything and keep the money as much as I can, also preparing my pets (2 cats), training them every day, and hopefully, I will do a training plane around China (if they allow me). Oh, man, I'm just anxious but keeping my head busy. But talking with a friend who study Japanese, went to Japan, come back to her country to do his major in medicine related, then thought about where to do her postgrad, She went for a 3 or 4 months trip around Europe, then come back and more clear where she would like to do her postgrad. She told me that you need to find the place where the morals and values that you built align with you. Yes, China gave me opportunities and met people that I will hold in my heart...but it's still things that really don't align with me culturally, so I just decide to prepare to leave. All the hopes and safety for your plans. You got this!

It was called the south china sea because when it become known to the west china was in control of it. Almost all countries at the time around it where tribute or subjugate states to china during the qing dynasty. That's why it's called south china sea.

I've lived through 2019, 2020, and 2021 up to August in my home town Guangzhou, China before leaving for university in Canada. It was a little frightening at first coming out of the safe zone of China, but I had to get used to the fact that I will get to meet multiple people who catch COVID every month at some point, so I did (no I am not praising the normalization of COVID as an excuse for governments to ignore its impact). I really wanted to go back to Guangzhou for the summer, but unfortunately, the way China handles its borders at the moment makes returning to the country virtually impossible.

Your presentation made me tearful…honest, unbiased. I’ve experienced same situation been unable to travel abroad to my 2nd home island due to zero covid policy in mainland China and Macau. True. We’ve to figure out Pros and cons and make the choice to stay or go when we can - well, closed-bortherness did make me travel to fantastic places like Xinjiang in my country, but …my parents live in China and I’ve to consider the dilemma of ‘easy go, hard to get in’. The country & people of China are amazing but the political situation (Chinese gov't) doesn't respect Western norms of personal liberty & freedom of thought/expression. Things are not great in the U.S. but at least some vestiges of freedom/liberty still exist. I wish you the best with the channel as I have learned so much about Chinese cooking/cuisine from it. Turned me on to Lao Gan Ma. 😀I loved your episode with Kenji Lopez-Alt and the way you make Chinese food less intimidating for foreigners - while still authentic. Safe travels. Best of luck with the transition. I personally would love to see Thai regional showing up in your channel. I love having access to Chinese recipe/technique as it's the least accessible for me living in America and being gluten free. Your channel has really broadened my understanding and honed my technique. That said, a reflection of your surrounding is a no brainer.

The US was not under lock downs... certain states were. Here in Texas, we were locked down for 1 month. After that, we were free to travel around the states without issues...

As a Chinese citizen and if we're based in Asia, it'd be easier for me to go back. Flights will still be expensive but it's not 20K USD expensive. So theoretically I'd still be able to come back a lot easier than Chris.

I left China in March 2020 because I saw how things were going. It hurts me to see so many of my friends and family trapped inside being woken up at all hours to take Covid tests. I miss China, but I know I made the right decision for my family.

Hey man, I feel your pain. Everyone's bailing on China specifically because of the "dynamic zero COVID". Families are facing big, sometimes devastating, decisions. It's been 2,5 years since I've been outside of China and it's too much. Same family back home things. And it's getting so that travel within China is tight as well. Beijing has been clear: choose China or an open life.

Even catching covid at this point will be easier than dealing with the camp hotels and barrage of tests. people do mental gymnastics to justify the living conditions in every country, it is called coping. as long as some aspect of their life is better than the "other", that is all that matters to them. their propaganda make sure to spend all the air time pointing out the problems of the "other", often with video evidence and verifiable outside state media, while ignoring their own problems i recommend you look into cultural relativism

I’m leaving china in June… not sure for how long. Maybe a year or two as well. Have similar thoughts about loving living here etc, but need to spend time with family in usa and do some travel too. Been considering thailand, vietnam or Indonesia once I decide to settle in somewhere … what visa are you looking to get to let you live in bkk for a year + ?

Heading to Bangkok for 2-3 years sounds awesome. I’ve been following your videos from time to time and a lot of the stuff you feature I haven’t even heard of as a Chinese-Canadian of Sichuanese heritage. Are you guys maybe considering kind of going back and forth between China and Thailand for the future? Because that’s something I might plan on doing if possible. I’m currently in Taiwan and heading to Malaysia in 3 weeks (long story short, kind of stuck here for 2 years), and from there I’ll hopefully make my way over to Bangkok and the rest of Thailand. This sounds exciting for both of you.
