Live over here in the US. Midwest. I had never heard of Bun Bo Hue until I saw this last month. Naturally, I had to find a restaurant that offered it. Not easy around here. Found it by accident at a Vietnamese restaurant I had never been to about twenty miles from my house. The owner said it was his second most popular soup after his PHO. I really enjoyed it and I suppose I am going to have to get a good recipe to try and make at home. Love your channel.

You would know better than I, but that looks like shrimp oil rather than shrimp paste. It looks like where you'd just take the shrimp shells and heads, smash the heads with a pestle and cover in oil with whatever other spices you like (ginger, garlic, shallots) and cook it for 45 minutes or so and then drain off the oil.

As I mentioned in a previous comment I did have someone kindly email me a link to a bottle which looks suspiciously similar from a small manufacturer in Hue (thank you Binh). I'm trying to get it shipped over to test and see the benefits vs cost.

That mam ruoc is the oil that forms from the fermentation/drying. Liquid gold mum calls it

It's not easy to come up with a very good "mắm ruốc". That's the secret she did not show.

Never seen or heard of this in Australia. From the clues given it's from her home town in Hue. I did get an email from a subscriber on where to potentially get a bottle exactly like this from a small manufacturer in Hue so I'm working on shipping it over to test. This definitely isn't main stream product but has the potential to turn the competition on its head if your the only one rocking this in the city/country - provided your recipe is already good.

I have tried Shrimp Paste in Pho. I didn't think it was the secret. I have never actually tried BBH. I'll have to try it sometime. I do like spicy dishes.

@@Pho there are some brilliant Pho restaurants in the Western suburbs of Adelaide, many of them the quintessential “blink & you’d miss it“ kind of joints tucked away on small unassuming street corners with plain, understated decor etc.

Yes you can use this in salads. It won't be as punchy though. There's a water spinach (morning glory) salad mum used to make when I was a kid. Blanched the spinach and added shrimp paste (normal kind) with lime. Versatile the shrimp paste.

It stinks but I love it =) One to steer clear of if on a first date although I've heard of quality mints and chewing gum offered by restaurants after.

I didn't get to see her recipe per se but it proves my point that there are secrets you add which make it more special than others. Sometimes these secrets you don't have access to living in the West. It's great to know but 99% of people on this channel will not fly to Hue go door knocking to find this product just to bring back and improve their recipe.

100% underrated content as has been said. Love it!! LOL getting a special shrimp paste means "you have to know the right people" is some legit old world Vietnam stuff I never thought I'd hear, I probably won't be getting it in Canada 🤣
