蛋白西蘭花
材料:
西蘭花1個
雞蛋3隻
處理:
1. 西蘭花,切細舊。
2. 西蘭花,用清水1升加入粗鹽1湯匙,浸5分鐘,清除蟲滋,莖部,刨去粗糙的表面,切細塊,同樣浸5分鐘。
3. 清水沖乾淨西蘭花,擎乾水。
4. 蛋黃及蛋白,分開放在2個碗內。
烹調:
1. 大火在鑊中煲滾1鑊水。
2. 加入油1湯匙。
3. 加入西蘭花,冚蓋煮3分鐘。
4. 西蘭花已煮至軟身,擎乾水。
5. 大火在鑊中煲滾水500毫升。
6. 加入調味料:
a. 鮑魚汁1茶匙
b. 糖1茶匙
7. 加入生粉芡,煮至稠厚,轉慢火。
8. 加入蛋白,攪勻。
9. 放西蘭花落鑊,攪勻。
10. 完成,上碟,可享用。

Ingredients:
Broccoli 1No.
Eggs 3 Nos.
Preparation:
1. Broccoli, cut in pieces.

a. Abalone sauce 1 tsp
b. Sugar 1 tsp
7. Put tapioca sauce, cook until the sauce becomes thick. Turn to low flame.
8. Put egg white, stir well.
9. Put broccoli in wok, stir well.
10. Complete. Put on plate. Serve.
