揚州炒飯 Yang Chow Fried Rice (港式家庭簡單版)

材料:
义燒 80公克 (切丁)
蝦仁 10隻
蔥花 1/4杯
白飯 1 1/2 碗
鹽 少許
糖 1/2大匙
生抽醬油 (或醬油)1大匙
花生油 4大匙
高湯(或水)2大匙(飯太乾才加)
蛋 2個+蛋黃1個
鹽 少許
醃蝦仁:
鹽 1/2小匙
糖 1/2小匙
米酒 1小匙(或紹興酒)
蛋白 1個
玉米粉 1小匙
花生油 1小匙
做法:
蝦仁挑除沙線,洗凈擠乾水份,
加蛋白(蛋黃留起)、米酒、鹽、玉米粉、油拌均勻,醃約15分鐘,
用大水沖淨再用毛巾吸乾水份。
加入少許鹽再醃一下。
在鍋中加入油,大火炒蝦仁至八分熟,撈起備用。
把蛋加入少許鹽打散備用。
在鍋中加入油,中火加熱,炒蛋至半熟,加入白飯重覆壓平炒散,使水氣漸乾,炒出飯香。
加入蝦仁、义燒拌炒,再加鹽、糖,把醬油從鍋邊加入,不停炒散。
最後加入蔥花拌炒一分鐘即可關火起鍋。
港式揚州炒飯 Yang Chow Fried Rice (港式家庭簡單版)
Ingredients:
80g Cantonese BBQ pork (diced)
10 shrimps
1/4 cup chopped spring onions
1 1/2 bowl cooked white rice
Salt to taste
1/2 tbsp sugar
1 tbsp soy sauce
4 tbsp peanut oil
2 eggs + 1 egg yolk
1 pinch of salt
For marinade:
1/2 tsp salt
1/2 tsp sugar
1 tsp rice wine
1 egg white
1 tsp cornstarch
1 tsp peanut oil
Method:
Devein the shrimp and marinade with salt, sugar, rice wine, egg white, cornstarch, peanut oil for 15 minutes.
Then rinse the shrimps and pat dry.
Add a bit salt to the shrimps again.
Heat oil in a wok over high heat, fry the shrimps until nearly done, remove and set aside.
Scramble the eggs with a bit salt.
Heat peanut oil in the wok over medium-high heat. Pour in the eggs, before it’s cooked, add the white rice and keep stirring until the rice a bit dry up.
Add the shrimps and BBQ pork and stirring, and then add salt, sugar, soy sauce and stir-fry for 1-2 minutes.
Sprinkle in the spring onion and cook for one more minute.
