Today's recipe is, first of all, a vegan and gluten-free version of fritta pizza. Secondly, our fried pizza is primarily a response to all the requests for making a pizza without yeast.
As it turns out, there are quite a few people who avoid or cannot eat yeast. And it is with them in mind that this recipe was created.
Interestingly, most won't even catch on that there's "something wrong" with this exceptionally delicious and crispy pizza. Check it out for yourself, because we are putting into your hands a really exceptionally simple and delicious recipe.

Recipes:
Time: 50 minutes
Quantity: 2 pizzas
Ingredients - dough:
100 g corn flour
70 g of potato flour
20 g buckwheat flour
20 g ground flaxseed
1/2 teaspoon salt
1/2 teaspoon soda
200 ml boiling water
40 ml olive oil
1 tsp balsamic vinegar
Oil for frying
Ingredients - sauce:
4 tbsp tomato passata
1 tsp tomato paste
1 pinch of salt
1 pinch of dried oregano
1 pinch of dried basil
Ingredients - extras:
100 g vegan yellow cheese
1 tablespoon olive oil
1 pinch of salt
1 pinch of ground black pepper
1 asparagus
1 mushroom
1 marinated artichoke
1 teaspoon of truffle oil
Preparation:
Pour boiling water over the flaxseed, mix thoroughly and set aside to cool.
Cut the extras i.e. asparagus, mushroom and artichoke into oblong slices and set aside.
Grate the cheese on a vegetable grater and mix with olive oil salt and pepper.
In a separate bowl mix all the sauce ingredients.
We mix the dry ingredients for the dough in another bowl and combine with the cooled hay and oil, then knead the dough. At the end, we add balsamic vinegar and knead the dough once more.
Pour a few tablespoons of olive oil into a frying pan and heat it up.
Divide the dough in half and form a pancake from each piece on a silicone mat, making sure that the edges are higher than the center and the pancake is no larger than the bottom of the pan.
Transfer the pancake to a pan with hot oil, gently prick the center with a fork so that it does not bulge during frying and, if necessary, hold it with a spatula, for example, so that the dough fries evenly.
To make both pizzas fry in a similar time, we can heat a second pan in parallel.
Turn the first pie to the other side and when it is browned transfer it to the other pan, spread with half of the sauce, arrange half of the asparagus, mushrooms and artichoke and sprinkle with half of the cheese.
We cover the pan and wait for the cheese to melt. In the first pan we put the second pancake and after puncturing the center also fry on both sides.
If necessary, we add a little olive oil.
On the center of the second pie we put the sauce, vegetables and cheese, and then cover with a lid just like the second pan, so that the cheese melts.
When both pizzas are ready we can serve them.
