Ingredients:
150 g 00 flour
120 g Potato starch
3 medium eggs
160 g Granulated sugar
100 g soft butter (alternatively 90 ml sunflower oil)
75 g whole milk at room temperature
Half a vanilla pod
Peel of a lemon
1 sachet of baking powder about 15 g
3 g salt
Powdered sugar to finish
Method
Whip the soft butter with the semolated sugar, and put the vanilla seeds and start whipping everything, add the lemon zest and the eggs little by little, always kneading.
When everything is well blended, add the flour, starch and baking powder, always sieving them.
With a spatula we start mixing from bottom to top without disassembling the dough.
Now we take a previously buttered pan and pour our mixture and bake at 170 degrees in a static oven for 30/35 minutes.
Please, it can be a lot or a little, this depends a lot on the type of oven you have, if you use a thermometer you must measure the temperature in the center of the cake it must not exceed 92/94 degrees and if you don't have a thermometer, use your grandmother's old toothpick .
Leave to cool, remove the cake from the mold and sprinkle with icing sugar
