3 cloves garlic
130 g / 4.5 oz Gruyère
80 g/1/4 cup Parmesan
450 g potatoes

INGREDIENTS:
1 large onion
4 medium sized potatoes
4-5 large eggs
Spices and oil:
2/3 cup (160 ml) olive oil
Salt
INSTRUCTIONS:
1. Heat a non-stick frying pan over medium heat and pour in
2/3 cup/160 ml extra virgin olive oil.
2. Add 1 large onion to the pan. Stir until all the onions are coated with olive oil and let them cook in the oil.
3. Peel and wash 4 medium-sized potatoes. Cut them into pieces.
4. After cooking the onions for about 4 minutes until they are translucent, add the chopped potatoes to the pan. Toss to coat the potatoes with olive oil. Stir every 3 minutes to ensure even cooking.
5. While the potatoes are cooking, crack 4-5 large eggs into a large bowl. Whisk them until well combined.
6. Once the potatoes have cooked for about 20 minutes and are golden brown, remove the pan from the heat. Place the potatoes and onions in the bowl with the eggs (strain the olive oil as it will be reused). Season generously with sea salt and stir until well combined. Set aside for 15 minutes.
7. Heat a 20cm frying pan over medium heat. Pour in the egg-potato mixture until it forms an even, single layer. Run a spatula around outer edges.
8. Cook for 3 minutes over medium heat. It's time to flip the tortilla: place a plate on the pan, flip the tortilla onto the plate, and then place it back into the pan. Fry for another 2-3 minutes. Using the back of a spatula, press the cake from the outer edges toward the center until the edges are rounded.
9. Once the tortilla is cooked (in our case, slightly moist in the center), remove the pan from the heat and transfer it to a serving platter. Treat yourself to this delicious dish and enjoy! Mm... delicious 😋
