Thank you Wil for simple, easy & straightforward recipes. It definitely inspires me to dust off my apron & get cooking. I really can't say enough about the simplicity of the vegan recipes you provide, because in this day & age of mail order meal kits, frozen foods, etc., I think it's so easy for people to not want to cook. For me, it's the whole experience from start to finish that is so pleasurable. I've always loved cooking, but find the older I become, the simple, yet delicious meals are what beckon me to get busy in the kitchen.

I tried this for dinner tonight and it was great. I doubled the recipe, used wide rice noods instead of fettuccini and added some tempeh for protein. I think adding regular tomatoes or vine-ripe tomatoes might be better if you're looking to get some more juices from them to deglaze. Maybe the romas that I got were just kinda dry, I definitely didn't get any deglaze action out of them. Also, definitely needed some salt or msg to round it out after everything is all mixed together. This was a tasty, quick and easy meal that could be done on a weeknight. I can always rely on your vids for a good meal.

My girls left home, I stopped cooking. Survived on toast, porridge, rice, and pasta, with just shop bought sauces. Have been watching you for a while, and have decided to give your delicious recipes a go, instead of the plan to start having ready cooked meals delivered. Well, that's the idea. Hope it works, its been twenty plus years since my stove, and oven got to do anything. Have to get myself under control, somehow. BUT, just watching your amazingly doable cooking is mesmerising. Thank you, a vegan from Australia

Just made this - with substitutions (one small non-Roma garden tomato, three fresh chilies and Korean chives also from the garden instead of all the dried red chilies and the green onions), but it's totally delicious! Used my first attempt at your chili oil, too, which is wonderful, though I failed to follow all the instructions! lol Thanks!

Damn, Yeung Man ALWAYS hits it out of the park! I'm vegan and Asian cuisine is my favorite, so I've made countless of his recipes. What I love is they are ALWAYS incredibly tasty, with ingredients I typically have on hand (such a HUGE plus). This one was so easy and SO delicious, I just had to leave a note. I did substitute - I didn't have his chili oil so I used Gochujang paste, and I was out of syrup so I used brown sugar, and I didn't have dark soy sauce - but even so, this was just so delish and comforting. Thank you, Yeung Man!!
