猪脚姜醋又称鸡蛋猪脚姜醋或姜醋,是一道广东的传统名菜,最具特色的女人滋补食品,属于粤菜。选用猪脚、鸡蛋、肉姜、及广东特有的甜醋精心烹饪出来的美味私家菜。广东家庭通常是,一家老小一起吃,吃后就像美酒下肚,神清气爽,脸色红润。

《猪脚醋食谱》Black Vinegar Pig’s Trotter)Recipe
文冬姜 两百克
Bentong Ginger 200g
椰糖 一块 两百七十克
1 piece gula Melaka 270g
鸡蛋 十粒
eggs x10
猪手 斩块 一千七百克
1 pig’s trotter, cut into pieces 1700g
黑醋 一瓶 三百七十五毫升
1 bottle black vinegar 375 ml
两汤匙麻油
two tablespoons of sesame oil
两茶匙盐调味
two teaspoons of salt
七百毫升的水
700ml of water
步骤
1.文冬姜屑皮,切片
Bentong ginger peel and sliced
2.蒸锅里放张吸油纸,放入鸡蛋蒸至冒烟后关电焖二十分钟
Put a piece of oil-absorbing paper in the steamer, add eggs and steam until it smokes, turn off the power and simmer for 20 minutes
3.热水烫猪手五分钟
pig’s trotter in hot water for five minutes
4.加入两汤匙麻油
Add two tablespoons of sesame oil
5.爆香姜片到金黄色
Saute ginger slices until golden brown
6.加入猪手一起煸炒
Stir fry with pig’s trotter
7.加入两茶匙盐调味
Add two teaspoons of salt to taste
8.加入三百七十五毫升黑醋
Add 375ml black vinegar
9.加入七百毫升的水
Add 700ml of water
10.加入一块椰糖
Add a piece of gula Melaka
11.转小火焖四十五分钟到一小时至猪手软为止
Simmer for 45 minutes to 60 minutes until pork is tender
12.可以加入鸡蛋一起焖
You can add eggs and braise together
13.把鸡蛋翻面让鸡蛋的颜色更均匀
Turn the egg over to make the egg color more even
14. 45分钟后使用筷子插入猪手检查是否熟了
After 45 minutes use chopsticks to insert pork knuckles to check if they are cooked
