Today was a very cool day, I harvested some of our first zucchini squash from our spring garden AND used them to make a 100 year old zucchini bread recipe that the whole family loved. I hope you love it too!

Zucchini Bread Recipe:
3 eggs, 2 cups sugar, 3/4 cup oil, 2 cups all purpose flour, 1/2 tsp. baking powder, 2 tsp. soda, 1 tsp. salt, 3 tsp. cinnamon, 2 cups peeled, grated zucchini, well drained, 3 tsp. vanilla, 1 cup chopped nuts or 1/2 cup each nuts and raisins.
Directions: Grease 2 (9x5x3 inch) loaf pans. Blend eggs, sugar and oil. Add flour, baking powder, soda, salt, and cinnamon and mix well. Add zucchini and vanilla. Add nuts (and raisins if desired). Bake at 350 degrees for 45 minutes or until bread springs back when lightly touched or tester inserted in center comes out clean.
