This is a cheating way compared to the people in china who created this art. This is normally done by people working a shop on the streets with just their hands and air from their lungs. This is just a way to look fancy

Pretty sure this is a way to do it so bacteria doesn't form eg gloves and no spit from the guy using air from his lungs. Its not always about authenticity but also making it safe...

carmen rosewood that is not what they said. It's a different skill, blowing with your own air is a lot harder, but using the device in the video makes something safe to consume, but also consistent air, that air by your mouth doesn't. To each his own.

Nicholas Messerli pulled sugar meaning they boil it 3 cups sugar one cup of corn syrup and a half cup of water boil it on the stove use a candy thermometer you want it at the hard crack stage take it off the heat let it sit for a minute add coloring and flavors that you choose once you take it off the heat it will steam and bubble to cook out the moisture becareful when handling molten sugar before you tip it out onto your table use a bench scraper (it's used for pastry dough ) to incorporate air into the candy mixture to make it thicker and maluable work quickly after this step pick up the candy mass and put it under a heat lamp to keep it warm get your sugar blowing equipment and make different sugar creations.
