@@jockkeller4412 A normal system of jobs in that kitchen was to work every station in the kitchen. Usually changing every four months. But I happened to be on the pastry team which didn’t rotate to other stations as much. I only worked pastry when I was there.

Thank you for posting these. I loved the Kitchen Sessions when it originally aired. I’ve always loved to cook, but Charlie Trotter taught me to cook well. The dishes in this episode have brought back some good memories. I will have to make them again. Thank you!

You were the top Chef I admired in my career of 45+ years and rise to be a Corporate Executive Chef. I wanted to meet you, but I always eagerly awaited your books. I worked my life away until I became disabled and no longer able to have my passion which you, Chef Trotter, were very instrumental in. If I had an idol it would have be you. @@oneschance I had dinner there and it was the most inspiring culinary experience I ever had. Being an amateur home cook, the food was amazing but the attention to deal of the servers was most impressive. I asked our server about the infused herbal oils they used and between courses, she brought one of Charlie's books that talked about infused oils to our table with the page opened. After dinner I wanted to buy a set of his VHS tapes and while waiting near the entry that looked into the dining room for the hostess to get the box set of tapes, a small man in a slightly soiled chef's apron came out of nowhere and stood next to me, looking into the dining room. I thought, who is this guy--and after a perfect evening why would they let one of the kitchen crew stand there? On our way out of Chicago, at O'Hare I was walking by a newsstand and saw a cover of Chicago magazine with my guy on the cover! It was Charlie Trotter! I wish I would have had him autograph my VHS tapes! I have all of his books and they are my most treasured cookbooks--only second to Diana Kennedy, who I go to know... but that's another story...

@@danehenas I am sitting in the hospital after a car accident. - I’ll be OK. Reading your comment just put a huge smile on my face. Working for Charlie Trotter gave me the best memories of my career. Also, the hardest job I’ve ever had. But that’s what it took to offer that level experience to the guest. I really appreciate you sharing that.
