I'm in Thailand and don't know how fresh the eggs are, just really struggling to get it thick enough, have some knowledge, does it matter if eggs are room temp or from fridge. Tried a few methods, using 2 medium eggs, 400 ml of oil, heaped desert spoon of English Mustard and 2 of white vinegar. Any Surgestions would be really good as the shops here don't sell what I want?

If I was a betting man, based on what I can see on the label, I'd say that's avocado oil. I'm not 100% sure though.
