Hi Deb this is Chris Riley. I now have a fresh appreciation for comfort food because of this video. Thanks so much for sharing your knowledge. My favorites comfort food is my mom's cheese enchiladas in red (rojo) sauce which she made from scratch using dried red chilies. She served them "pancake" style (one stacked upon another). Each corn tortilla was dipped in the red sauce and topped with cheese and diced onions. The final tortilla was topped with a fried egg sunny side up. So delicious!!!

Wow, Chris….that sounds amazing!!!! I’ve never made salsa rojo from scratch, but I have made verde. Did you ever have this with salsa verde? I’m assuming corn tortillas…is that correct? Did she teach you how to make this dish so you can still enjoy it when you have a craving (which you probably do now)? - Deb

@@DebsKitchen yes we use corn tortillas. Mom never taught me how to make rojo (or verde) sauce ☹ so I just by the canned version from the grocery store. I don't know about you but none of us kids can come close to making enchiladas like mom!

My mom was never much of an enchilada maker, but also didn’t have the heritage behind her that your mom did. I’m thinking it would taste awfully good with verde sauce….kind of like the chilequiles they used to serve at work. Think I might need to give this a try. 😋

Comfort food is typically homemade and far less processed than the microwave in plastic dishes that have ingredients that aren’t actual food. This is a good common sense video. You could literally make a series on the benefits of comfort food and how the health of too many people in our society has declined because they substitute simple, homemade dishes for highly processed foods. Great work as usual!

@@DebsKitchen there’s too many comfort foods that just give me the cozy at home vibes. Thanksgiving dinner is certainly comfort food to me, but for more basic food, I like chili, stew, meatloaf, baked yams with chicken and greens. You know, those types of meals that bring back memories of time with loved ones. Because of my dad’s heart condition, the way food gets prepared is with lots of healthy substitutions from typical recipes. You’d be surprised how I prepare Thanksgiving dinner. People really can’t tell that it’s a lighter version except they don’t feel as stuffed. It’s feel good food that’s good for you.

Deb’s what is least minimum minutes to cook something on slow cooker? Can you cook something is 16 minutes or 20 minutes? Thank you

Hi Abdi and welcome to my kitchen. Slow cookers are exactly what the name sounds like “slow” cookers and are meant to cook food low and slow (low temperatures for a period of several hours). I think maybe what you are asking about is a pressure cooker that will decrease your cooking time by cooking items like meat or dried beans or even hard boiled eggs under pressure in a matter of minutes. The amount of time to cook something in a pressure cooker depends on what it is, the volume or size of what it is and, with meat, if it is thawed or still frozen.
