Directly from the beating heart of my restaurant in Milan, in via San Marco 26, today I share with you one of the recipes that my customers love most: Fassona meat tartare and fried yolk.

Beef tartare is a recipe that celebrates the purity and quality of beef, especially when using Piedmontese fassona meat, known for its tenderness and rich but also very lean flavour. The Piedmontese breed produces incredibly tasty meat, which we enhance with a simple but refined seasoning, and the addition of a crunchy egg yolk which adds a touch of texture and unique flavour.
In this dish, the balance between flavors is fundamental. The meat is cut with a knife, seasoned with quality extra virgin olive oil, a pinch of salt and freshly ground pepper. To complete our gourmet beef tartare, a crispy egg yolk, prepared with a special technique that I will show you in the video, which always surprises my guests. And to finish, a delicate pea cream, a delicious Parmesan fondue and some Parma ham chips.
To accompany this dish, I chose Susumaniello Rosè from Varvaglione, a wine which, with its liveliness and freshness, goes perfectly with the richness of the tartare. Each sip of this wine prepares the palate for the next bite, creating a harmonious and memorable gastronomic experience.
