Today I will take you again to my new kitchen in Milan, courtesy of Febal Casa, to show you how to prepare a classic of Roman and Italian cuisine: Pasta with bacon, artichokes and pecorino!

Let's start with the main ingredients: artichokes. This spring vegetable, rich in flavor and versatility, is the heart of this recipe. And, when we talk about bacon, we are referring to the best: the seasoned bacon from CLAI Salumi, whose consistency and aroma intensifies every dish. For the final touch, a generous sprinkling of pecorino romano, the cheese which with its strong taste envelops and completes the flavor of this dish.
Each ingredient is carefully chosen to ensure that the result is not only delicious but also representative of the Italian culinary tradition, with an eye on freshness and seasonality.
To accompany this first course I chose an Apulian wine, Marfi Verdeca Sauvignon from Varvaglione, which with its aromatic notes goes perfectly with the richness of the spaghetti with artichokes and bacon. This combination is not only a triumph of flavors, but also an example of how food and wine can enhance each other, taking the gastronomic experience to the next level.
Recording this video recipe in my new home in Milan gives me the opportunity to share with you not only a recipe, but also a piece of my life.
