This salad is the bomb! It was in my regular rotation for years and this video has me scratching my head as to why it is no longer. I have two humble suggestions for improvements: 1) Add Thai basil. This is a great addition if you have easy access to the stuff. Fortunately for me, there is an Asian market not very far away that sells it cheap.2) The personal "fine tuning" of the dressing consists of finding just the right combination of lime juice, fish sauce, and palm sugar that appeals (sweet, sour, and salty). Of course, like any other classic dish, there are a gadzillon riffs one could take on it, but there is a reason why it is a classic. I have a feeling that I will be enjoying this again for the first time in years within the next couple of days. Thanks Andrew!

Honestly his style is pretty dated. Food trends come and go super quick. Also he hasn't been a main staple on cooking tv since I was a teen. (early 2000's)

Acidic ingredients such as lemon or lime juice, vinegar, wine, tomatoes, and even pineapple will all help to neutralize the pH levels of spicy things like chilies 🌶
