Mat Noh & Rose, the stall named after the couple, is known for its ginger fried chicken rice, fried to crispy chicken skin, liver and gizzard. The dishes are characterised by a distinct orangey hue, marinated with a mixture of ginger, garlic, pepper and secret ingredients. The chicken skin, well coated with spices, is so crispy that it can be eaten like a biscuit!
Each serving of chicken set is topped with a scoop of crumbs that adds texture and flavour. The chicken is tender and moist and crispy on the outside. It pairs so well with the soft, fragrant long grain basmati rice, which is less commonly used for chicken rice.
Rose takes pride in her homemade tantalising black chilli sauce that elevate the tastes of the dishes.
