Ingredients:
Beef on the bone - 2.9 lbs (1.3 kg)
Onions - 3 pcs.
Carrots - 1 pcs.
Garlic - 3 cloves
Sugar - 1 tbsp.
Black pepper - 1 tsp.
Chmeli-suneli - 1 tbsp.
Utskho-suneli (fenugreek) - 1 tbsp.
Chili pepper - 1 tsp.
Tomato paste - 5.3 oz (150 g)
Laurel leaf - 2 pcs.
Tkemali - 1 tbsp.
Walnuts - 1.8 oz (50 g)
Rice - 6 tbsp.
Water - 3 liters (3.17 quarts)
Fresh cilantro
Preparation:
Cut one onion and one carrot and fry in a dry pan until browned.
Turn the vegetables over and place the meat.
Fill with cold water.
Bring to a boil, skim off the foam.
Cover with a lid and leave to simmer on low heat for 1.5 hours.
Meanwhile, chop 2 onions finely.
In heated sunflower oil fry the onions stirring until transparent and characteristic flavor.
In the broth after half an hour add bay leaf and a little salt about 1.5 tsp.
Add tomato paste to the onions and stir.
Fry for about 5 minutes stirring constantly on medium heat.
Add a little salt, about 0.5 tsp. salt, sugar, black pepper, hmeli-suneli, utskho-suneli, chili to the frying mixture.
Stir.
Chop the garlic finely.
Add to the roast.
Add tkemali.
Chop walnuts finely.
Add to the roast.
Chop cilantro finely.
Take the meat and vegetables out of the broth.
Pour rice into the broth, turn up the heat and stir.
Once everything boils, turn the heat down to minimum.
After 7-10 minutes, add the roast.
Cut the meat into pieces.
Add to the soup, let boil for 1 minute on low heat.
Taste for salt, if necessary, add more salt.
Add cilantro, let boil and let rest for a minute.
According to your taste you can add sourness with tkemali sauce.
