Marination:
Medium size prawns - 12-13
Salt 1/2 tsp
Turmeric powder 1/4 tsp
Lemon juice - half lemon
Mix well and marinate prawns for 30 mins.
Masala:
Byadagi chilly - 6-7
Coriander seeds - 1 tbsp
Jeera/Cumin seeds - 1/4 tsp
Saunf less than 1/4 tsp
Mustard seeds less than 1/4 tsp
Pepper corn - 1 tsp
Fenugreek/methi seeds - less than 1/4 tsp
Turmeric powder 1/4 tsp
Garlic 6-7 cloves
Ginger - 1 inch
Tamarind - small lemon size
Salt - 1 tsp
Ghee 4-5 tbsp
Method:
1. Soak byadagi chilly in hot water and lemon juice for 15 mins
This gives rich red colour
2. Heat a pan.
Add coriander seeds
Mustard seeds
Pepper corn
Jeera/cumin seeds
Saunf
Fenugreek/methi seeds
3. Dry roast for 1-2 mins on low flame.
4. Once it cools add the roasted masala to a mixer jar.
Add garlic and ginger.
Add turmeric powder.
Add tamarind.
Add soaked red chillies with water.
Make a paste as shown.
5. Heat 1 tbsp ghee in a pan.
6. Add marinated prawns and fry for 2 mins on each side.
7. To the same pan add 1 tbsp ghee.
8. Add the masala and keep stirring.
9. After 5 minutes add 1 tbsp ghee.
10. Keep stirring throughout the process to avoid scorching.
11. After 10 minutes add 1 tbsp ghee and keep stirring.
12. Add salt.
13. Once the ghee starts separating and the colour changes, add prawns.
14. Cook for 4 minutes till prawns are completely cooked.
15. Restaurant style authentic Mangalorean ghee roast ready.
