Ingredients & Method:
1. Basmati rice - 500 gms
Wash the rice and soak for 1 hour.
2. For Making Birista
Onion - 350 gms
• Heat oil for deep frying the onions.
• Add onion and fry on high flame, keep stirring occasionally to avoid burning.
• Once the Onion turns light brown switch of the stove.
• Spread on the plate and let it cool, so that it becomes crisp.
3. Ingredients for marination:
Boneless Mutton - 500 gms
Ginger Garlic Paste - 2 tbsp
Green chilli paste - 2 tsp
Curd - 100 gms
Salt - 1 tsp
Turmeric powder - 1/4 tsp
Coriander powder - 1 & 1/2 tsp
Cumin powder - 1/2 tsp
Red chilli powder - 1/2 tsp
Mint leaves - 1 tbsp
Coriander leaves - 2 tbsp
Tomato - 2 medium size
Birista - Half portion of what we prepared
Lemon - 1/2
Add all the above mentioned ingredients and marinate mutton for 2 hours.
4. Saffron(kesar) strands for colour
Milk 30 ml
Kesar strands 1 pinch
Add milk and kesar strands and keep aside for 30 minutes.
5. Ingredients for Cooking Rice
Shahi Jeera - 1/2 tsp
Cloves - 3
Bay leaf - 1
Cinnamon stick - 2 inch
Black Cardamom -1
Green Cardamom -3
Pepper Corn - 8-10
Star Anise -1
Lemon ½
Ghee 1 tbsp
Salt 1 & ½ tbsp
.• Take a vessel and add 2 litres of water.
• Add salt.
• Add ghee.
• Add all the whole garam masala.
• Squeeze ½ lemon.
• Once the water starts boiling, Add rice.
• Once the rice is 70% cooked, Switch off the stove and strain the water.
6. Ingredients for gravy
Shahi Jeera - 1/2 tsp
Cloves - 4
Bay leaf - 2
Cinnamon stick - 2 inch
Black Cardamom -1
Green Cardamom -2
Pepper Corn - 10-12
Star Anise -2
Keora (Kewra) water - 1tsp
Garam masala powder - ½ tsp
Ghee - 2 tbsp
• Heat 4 tbsp oil in a cooker.
• Add all the whole garam masala and fry for a minute.
• Add marinated mutton.
• Add little water.
• Add Keora (Kewra) water.
• Mix well.
• Close the lid and let it whistle - 6-7 times.
• Once the pressure is released, open the lid.
• Add 1 tbsp mint leaves, 1 tbsp coriander leaves and little Birista.
• Add garam masala powder.
• Add rice as shown.
• Add remaining coriander leaves, mint leaves & Birista.
• Add kesar milk for colour.
• Add ghee.
• Close the lid and dum for 10 minutes on low flame.
• After 10 minutes, switch off the stove and let It sit for another 10 minutes.
• Delicious Mutton Biryani ready to relish
