The Burek Queen is officially 83! Lots happened this week and I tried to document as much as I could to show you guys some of the behind the scenes of what goes into making a big cake and throwing a mini party. This is just a glimpse but I hope you enjoy it!

🍴Recipe
🎂 The Cake
5 eggs
4 egg whites
¼ cup sugar
2 packages vanilla sugar
Lemon zest
2 tbsp. Vanilla
100ml hot water
100ml oil
2 ½ tsp. Baking powder
1 ⅓ cup flour
🗺 Directions
In a stand mixer fitted with the whisk attachment, combine the eggs, egg whites, sugar, and vanilla sugar. Whisk until the mixture is nice and fluffy, about 7 minutes.
When it reaches that consistency add the lemon zest, vanilla, hot water, oil, baking powder and flour until combined.
Pour the batter into a pan lined with parchment paper and bake at 350°F for 15 to 20 minutes.

⛽️ Filling
2 containers mascarpone cheese
1 cup icing sugar
1.5 L whipping cream
🗺 Directions
In a stand mixer fitted with the whisk, combine the mascarpone cheese and icing sugar. Once it is all mixed, add all the whipping cream and whisk until it forms a peak.
🛠 Assembling the cake
On a sheet of parchment paper, trace your desired design and cut it out. Place the stencil on the cake and cut around the numbers. Pipe the filling in the middle, add the top layer and finish with more fillings. Decorate with your choice of flowers, chocolate, macaroons, and fresh fruit!

🌟 Review and Tips
1. Lightly grease your baking pan with oil. This will secure the parchment paper and prevent it from moving.
2. I used a 12 x 15 inch pan and had quite a few ends. You can munch on these or use them to make cake pops!
3. The cake itself is very light and delicate. It needed a little something which is why I added the chopped strawberries.
