Jack, this is the first recipe you have done where I feel to give advice. I would have added ricotta cheese to that pasta prior to baking it and certainly also some parsley, basil and oregano. Then bake it and you have a masterpiece! Love your videos! The ricotta is the true secret to great baked ziti!

I like most of his recipes but the ziti i dont know sharp cheddar & uncooked tomato sauce throw some parmesan & green onion with chicken cutlet on top. sorry i was going to barf on.that one..My mom is from Italy grew up watching her cook now i am a cook in Italy that goes in the garbage

You know this is a personal family recipe because there isn't an Italian within 100,000 miles that would put cheddar cheese in baked ziti. As a personal preference I run whole tomatoes through the large holes of a food mill to make my sauce. Crushing whole tomatoes with your hands is NOT sauce. It's tomato juice with lumps. I like the same consistency in all of the sauce. No ricotta, no mozzarella, no meat no good.

Agreed. Any sauce that cooks for more than 35 minutes, use a bottle of pomodori passata or like you said, put the tomatoes through a food mill to remove the seeds. The seeds can be bitter and that is released in the sauce over time. Adding cheddar cheese?...Its a result of us Americans not knowing how to eat or being fed incorrectly. If we get used to eating incorrectly and poor quality ingredients, that is all our palate knows.

Jack, beurre Blanc on it, is that common to have on pasta? I typically see on meat based dishes like fish, even on veggies such as asparagus but it’s new (for me) to see on pasta.

Hey Jack, next time try mixing the cheddar and mozzarella cheese together with this dish it puts it over the top! you can also add ground beef and/or pork too to kick it up even more. Just a suggestion

I'm not really comfortable that he was trying to pick stuff out of his teeth or that his hand was in and out of that metal container for utensils etc , he also wiped up the cheese that was left on board and he even lifted board and wiped under it ! , he also used a towel for his face and went on to wipe around edges of plate etc , um just thinking that this could probably get him closed down too , it was to loose and matter of fact like his manner of cooking and all of this was on camera , what happens that we don't know about or see ? 🙄😶😑😐🤔😣

It's not a water filled utensil reservoir. It's a stainless pot filled with food grade kitchen sanitizer and they can be found in most commercial kitchens. They are normally filled with commonly used knives, spatulas, and serving spoons for cooking. The sanitizer prevents cross contamination yet is safe to drink. The same kitchen sanitizer would also be used to spray on cutting boards and other food prep surfaces.

J N You really must be naive if you think there’s sanitizer in the utensil pot. I’ve been cooking in New York for over thirty years in large busy Italian restaurants and catering halls and have never seen that type of sanitizer used. You must work in fast food places that use that type of stuff

wow...at least we're warned. This one was exceptionally gross. Pasta gravy takes time and more ingredients than canned tomatoes. And cheddar cheese, no matter the quality, does not belong in "Italian" dishes.
