JACK, I wash mine then let the soak to absorb water you will be amazed how much water they will absorb and the cook faster.

I Love Thai food. I Took classes at Bangkok and Phuket. The little chilis are very , very hot. One instructor taught us that Every single Time we touch a chili , we would wash our hands with soap and water. At home I forgot that part of the Class. I had an itch , and scratched it . Holy smokes , I had touched my dangly bits and had to immediately shower....it hurt. The nice thing About making a mistake is learning from it. Never again Will I make that mistake

I love Daddy Jack and his cooking style but he made some serious mistakes cooking black beans. First off, always sort the beans because the store brand that he used is the same one I deal with and they always have stones in them. Next, never add salt to beans or they will take longer to cook. Only add salt at the end. Other than that, the addition of the smoked turkey leg was a great way to add flavor to the beans.

The only thing about the salt, is you use much less if you add it at the beginning of cooking. Heat amplifies salt.
