Ingredients:
330 g Radler Beer (cold)
110 g water (cold)
250 g whole wheat flour
250 g spelt flour (type 630)
25 g old bread (toasted, ground)
25 g flaxseed (ground)
12 g salt
10 g fresh yeast
5 g sugar beet syrup
Preparation:
Mix the ingredients on slow speed for 6 minutes, then knead for another 6-7 minutes on a faster speed. Stretch and fold the dough once, then cover and let rise for 120 minutes at room temperature, stretching and folding it once after 20, 40, 60 and 80 minutes. Shape the dough into a round on a floured surface, put it in a floured proofing basket, cover it and let it rise for 45 minutes at room temperature. Preheat the oven to 250°C top/bottom heat in time. Carefully turn out the dough from the proofing basket, score it and bake for 10 minutes. Reduce the temperature to 200°C and bake for another 35-40 minutes.
