Hello.
Today I brought a video of a baking experiment.
It seems that many people these days are wondering how to make financier with a chewy texture.
Usually financier is baked with honey, but I found information that adding trimoline can make financier with a more chewy texture.
So, I made a video comparing them by making 5 different types of dough: honey, starch syrup, sugar, oligosaccharide, and trimoline.
Oligosaccharides are usually not used in baking, but I was curious if there was a big difference when adding oligosaccharides, so I added them together!
And I made a dough with only sugar without honey or starch syrup.
There were a lot more interesting results than I expected.
The recipe is in the video, but it is an experimental recipe, so I will not write it down in the More section.
