INGREDIENTS:
For Chokha:
Eggplant/Brinjal(बैंगन) - 1
Garlic(लहसुन) - Some
Green Chilli(हरी मिर्च) - 2-3
Boiled Potato(आलू) - 4
Tomato(टमाटर) - 3-4
Ginger(अदरक) - 1 Inch
Lemon Juice(नींबू का रस) - Some
Green Chilli(हरी मिर्च) - 2-3
Onion(प्याज) - 1-2
Coriander Leaves(धनिया पत्ती) - Some
Red Chili Powder(लाल मिर्च पाउडर) - 1/2 Tsp
Salt(नमक) - As per taste
Mustard Oil(सरसों का तेल) - 1-2 Serving Spoon
Coriander Leaves(धनिया पत्ती) - Some
For Dough:
Wheat Flour(गेहूं का आटा) - 1.5 Bowl
Salt(नमक) - As per taste
Ghee(घी) - 3 Tbsp
Carom Seeds(अजवाइन) - 1/2 Tsp
Water(पानी) - As required
Ghee(घी) - Some
For Filling:
Roasted Gram Flour(सत्तू) - 1 Big Bowl
Mango Pickle Masala(आम का अचार मसाला) - 2-3 Spoon
Ginger(अदरक) - 1 Inch
Coriander Leaves(धनिया पत्ती) - Some
Onion(प्याज) - 1
Salt(नमक) - As per taste
Black Salt(काला नमक) - 1/2 Tsp
Red Chili Powder(लाल मिर्च पाउडर) -1/2 Tsp
Green Chilli(हरी मिर्च) - 2-3
Onion Seeds(कलौंजी/मंगरोली सीड्स) - 1 Tsp
Carom Seeds(अजवाइन) - 1/2 Tsp
Water(पानी) - As required
For Green Salad:
Onion(प्याज) - 2
Cucumber(खीरा) - 1-2
Red Chili Powder(लाल मिर्च पाउडर) -1/2 Tsp
Lemon Juice(नींबू का रस) - Some
For Green Chutney:
Tomato(टमाटर) - 2
Coriander Leaves(धनिया पत्ती) - 1/2 Cup
Ginger(अदरक) - 1 Inch
Green Chilli(हरी मिर्च) - 2-3
Cumin Seeds(जीरा) - 1/2 Tsp
Asafoetida/Hing Powder(हींग पाउडर) - 2 Pinch
Salt(नमक) - As per taste
Water(पानी) - Some
For Serving:
Onion(प्याज)
GreenChilli(हरी मिर्च)
Green Chutney(हरी चटनी)
Green Salad(हरा सलाद)
RECIPE:
For Green Salad, in a bowl, take some round sliced Onion & Cucumber. Put some Salt & Lemon Juice & mix well & keep it aside.
For Green Chutney, take a mixer grinder, put some chopped Tomato, Coriander Leaves, Ginger, Green Chilli, Cumin Seeds, Asafoetida/Hing Powder, Salt to taste & some Water in it. Grind well & take it out in a bowl.
For Chokha, wash the Brinjal & wipe it. Make a cut it in and fill the Garlic and Green Chilli in it. Take boiled Potato & some Tomato. Grease some Oil & roast them on a medium flame. Then take out the roasted Veggies into the bowl. Cover & keep them for some time. Peel them and mash them with the masher. Then put some grated Ginger, Lemon Juice, Green Chilli, Onion, Coriander Leaves, Red Chilli Powder, Salt to taste, & raw Mustard Oil. Mix all well & garnish with Coriander Leaves & Serve with Lemon, Green Chilli & Onion.
For Filling, In a bowl, take roasted Gram Flour/Sattu. Then put some crushed Mango Pickle, Ginger, Coriander Leaves, Onion, Salt to taste, Black Salt, Red Chilli Powder, finely chopped Green Chilli, Onion Seeds, Carom Seeds, and some Water. Mix the filling with the spoon & make the balls of the Filling.
For Sattu Paratha, take a big parat, put some Wheat Flour, Salt to taste, Ghee & Crushed Carom Seeds in it. Mix them all, add Water gradually & bind the dough. Cover the dough & keep it aside for 30 mins. Then make some dough balls, spread the dough balls with palm & fill the fillings & join them properly & roll it. Then put the Paratha on the tawa & roast it by applying some Ghee on it.
Keep the Jali on the flame and put half roasted Paratha on it and roast it. Apply some Ghee to it & serve the Sattu Paratha Chokha with Green Salad & Green Chutney.
