Boneless Chicken Mint Biryani
(Serves 4-5)
Ingredients:
1 cup of yogurt
1 tbsp red chili powder
1 tbsp garam masala powder
2 tbsp ginger garlic paste
2-3 green chilies slit
1/4 cup coriander leaves chopped
1/4 cup mint leaves chopped
2-3 tbsp lemon juice
1 tsp salt (as rq)
2 tbsp oil/ghee
1/2 kg boneless chicken
4 large (400g) onions sliced
Ghee
2.5-3 cups rice with whole garam masala

Procedure:
For Marination:
In a bowl, add 1 cup of yogurt, 1 tbsp red chili powder, 1 tbsp garam masala powder, 2 tbsp ginger garlic paste, 2-3 green chilies slit, 1/4 cup coriander leaves chopped, 1/4 cup mint leaves chopped, 2-3 tbsp lemon juice, 1 tsp salt (as rq), and 2 tbsp oil/ghee. Mix. Add 1/2 kg boneless chicken. Mix and marinate it for 5-6 hours or overnight.
For Biryani:
In a pot, add oil/ghee, and 4 large (400g) onions sliced. Fry until it turns golden brown. Remove half and keep it aside.
Add marinated chicken and fry. Cover and cook until the chicken is tender and the oil separates.
In a pot, add some ghee, rice (Cook 2.5-3 cups rice with whole garam masala if you want until 90% done.), fried onion, mint leaves, and gravy. Repeat the steps to make 3 layers.
On the top layer, add chicken, rice, orange food color with milk, mint leaves, fried onion, nuts, and ghee.Cover and cook on low flame for 20 mins or until done.
