Preheat the oven at 350 F or 180 C
Ingredients
Cocoa Mixture:
Butter: ½ cup
Coffee (optional): 1 Tbsp
Cocoa Powder: 3 Tbsp.
Vegetable Oil (optional): 1Tbsp
Whole egg (room temp): 1
Egg yolk (room temp): 1
Sugar (either White or Brown): ½ cup
Vanilla Essence (optional): ½ Tsp
Salt: ½ Tsp
Roughly Chopped Walnuts (optional): ½ cup
Roughly Chopped Almonds (optional): 1/3 cup
Semi-Sweet Chocolate Chips: ½ cup
Sifted All-Purpose Flour: ½ cup.
Method
Preheat the 350 F or 180 C.
1. Melt the butter for 30-40 seconds in the microwave.
2. To the melted butter add coffee (optional), cocoa powder, and vegetable oil (optional).
3. Mix and set the mixture aside.
4. In a large bowl, crack one egg and add an egg yolk. Whisk.
5. Add your sugars and beat the mixture for 10 minutes. This is a VERY important step.
6. After 10 minutes, add vanilla essence (optional) and mix.
7. Then add salt and mix for about a minute.
8. Then add in your nuts and chocolate chips.
9. Sift your flour and put the whisk ASIDE. USE spatula or wooden spoon to gently fold the mixture. It will take time so be very gentle.
10. Grab your 8x8 in a pan or a small pan and add the brownie mixture.
This mixture is quite thick. DO NOT ADD ANY LIQUID!
11. Put it in the oven for about 10 minutes. Insert a toothpick and when you see some crumbs sticking to the toothpick, take the brownies out. If you would like a more cake-like brownie then just keep baking for another 5 minutes.
12. Let the Brownies cool for 10 minutes. Take the Brownies out of the pan and let it cool for about 20 minutes.
13. Cut into Squares (make sure you get the biggest one!) and ENJOY!!!!!!
