Buffalo Chicken Mac & Cheese

Ingredients:
Mac & Cheese
½ C Salted Butter*
½ C Flour*
3-4 C Milk*
2 C Shredded Cheddar Cheese
2 tsp Salt
1 tbsp Black Pepper
1 tbsp Garlic Powder
1 tbsp Smoked Paprika
2 tsp Ground Mustard
1 tsp Cayenne pepper
½ - ⅔ box of Elbow Macaroni
Chicken
1 lb Chicken Breast*
2 C Butter Milk
4-5 C Flour*
1 tbsp Smoked Paprika
2 tsp Garlic Powder
2 tbsp Seasoned Salt
1 tbsp Msg
2 tsp Cayenne Pepper
1 Standard bottle of canola oil
Buffalo Sauce
½ Stick of butter
1 C Hot Sauce (traditionally Frank’s, I like Sriracha)
1 tbsp Worcestershire Sauce
1 tsp garlic powder
2 tsp White Vinegar

Instructions:
Mac & Cheese
Melt butter in a pot, and add flour. Mix together until combined. Let it cook for about 30 ish seconds. Add more butter if it’s too dry.
Gradually add milk a cup at a time and continuously whisk.
Gradually mix in freshly shredded cheddar. Continuously whisk until combined. Add more milk if it’s too thick.
Toss in salt, pepper, garlic powder, ground mustard, smoked paprika, and cayenne. Whisk together until combined.
Cook elbow macaroni and drain when finished. Pour cheese sauce into Macaroni and mix.
(Optional) In a heat proof vessel, bake in a 350 degree oven for 15 minutes
Buffalo Sauce
Melt butter in a small pot.
Add the rest of the ingredients and whisk together.
Chicken
Cut chicken breast into strips.
Create a flower dredge by whisking together flour, smoked paprika, garlic powder, seasoned salt, pepper, msg, and cayenne.
Pour buttermilk into a container.
Pour oil in a deep skillet or dutch oven and heat to roughly 325 degrees.
Coat chicken pieces in the flour dredge, dip into the buttermilk, and recoat in flour.
Fry chicken in hot oil until all sides are golden brown. Drain on a wire rack. Repeat with all pieces of chicken.
Toss the chicken in the buffalo sauce, evenly coating all sides.
Add buffalo chicken to the top of the mac and cheese on a plate or bowl and garnish with parsley.
