Canning whole tomatoes with a pressure canner is a great way to preserve their freshness and flavor for long-term storage. To get started, gather fresh tomatoes that are firm and ripe. I would pack my jars tighter next time to insure we get a full jar as you can see mine shrunk significantly. We will use these tomatoes in soups, stews, dips and sauces. There isn't anything better than having our farm fresh tomatoes available to us all year. Pressure canning instead of water bath is said to preserve the flavor a little better.
