Pineapple Buns 菠蘿包 (Bolo Bao) are one of my favorite pastries in Chinese bakeries. The inside is a soft and fluffy milk bread topped with a sweet crackle topping. * Tangzhong*
- water - 3 tbsp (43g)
- whole milk - 3 tbsp (43g)
- AP flour - 2 tbsp (14g)
Buns
- whole milk - 1/2 cup (112g)
- sugar - 1/4 cup (50g)
- active dry yeast - 1 packet (7g)
- Heavy cream - 1/3 cup (80g)
- 1 egg
- AP flour - 2.5 cups (313g)
- a pinch of salt
- unsalted butter (softened) 4 tbsp (50g)
Topping
- butter - 4 tbsp (60g)
- whole milk - 2 tsp (10.2g)
- 1 egg yolk
- vanilla extract - 1/2 tsp (2.17g)
- sugar - 2/3 cup (134g)
- AP flour - 1 cup (150g)
- baking powder - 1/2 tsp (3g)
- baking soda - 1/2 tsp (3g)
- pinch of salt
