2 rashers back bacon aka Canadian bacon (40 grams or 1.4 oz, roughly) 1.5 - 2 cups penne pasta 4-5 Tbsp Parmesan cheese 2 whole eggs 1 egg yolk olive oil water black pepper Gently mix two whole eggs with 1 egg yolk. Take care not to scramble. Grate parmesan into egg mixture. Mix gently. Grind black pepper generously into egg and cheese mix. Cook penne pasta in water in saucepan until al dente, about 10-12 minutes. Heat larger saucepan, pour in olive oil, and cook bacon for approx 6 minutes or until slightly crispy. Once pasta is cooked, pour approx 60ml of water into a separate container, and then strain water from pasta. Place strained pasta back on heat for a short moment to cook off remaining water. This should occur about the same time as the bacon is finishing cooking. Remove heat from bacon pan. Place pasta into bacon pan. Gently pour egg, cheese, and pepper into bacon pan and stir, trying to avoid scrambling egg. Pour ~60ml of pasta water into bacon and stir gently again. Serve.
