I'm in New Orleans Louisiana USA. We eat crawfish about 8 months out of the year. Plan on about 4lbs of live crawfish per person. We supplement with other items boiled in the seasoned water: garlic whole, sausages, mushrooms, corn on the cob, red potatoes. We use very large pots, and add the crawfish last after water boils. The mesh steel baskets are removed and contents spread out on top of newspaper on a table. Cheers

When I was a boy in Kentucky I would take a cup and place it behind them and then move my hand in front of them. They always zoomed into the cup. You can also put it in front of the rock you are lifting and they will go in as the rock is tilted. I took my boys to a creek a year ago and let them catch some. Great memories! Looked like you two had a blast.

just went camping with some family here in the states a few weeks ago, went diving for crawfish in a ice cold lake, gathered up 44 large ones using a net with some beef jerky near large rocks about 20 feet under, swim back up wait about 15 mins swim back down and swoop the bag up, had quite a nice snack to boil up to, we like to use sourdough bread, mayonnaise, avocado, butter and lemon too make little mini sandwiches, real tasty.

It's always a big deal when crawfish season rolls around here in Texas. We wash ours in salt water first so the will purge all the mud and "gunk" inside them first. Then we start a pot boiling with corn on the cob and small red potatoes along with the onions and garlic. Hush puppies are always a good side.

They are looking for dark places to hide and rest. If you get a small tightly woven basket, no bigger than 12 inches across, and just set it in the crook of that stream then go away for a couple of hours, you will come back to multiple craws in your basket. Approach the basket so that your shadow does not cast over it, and pick it up, opening to the top to prevent their escape. My great uncle used an old washer barrel and caught them each day. He said it was because the water could still flow through the little holes to allow drainage when in operation, so they felt no change in the water's movement, like a natural hiding place. Fast little things. :)

I grew up eating crawfish in Texas in the US. Two suggestions, we dip the tail meat in cocktail sauce, a combination of tomato ketchup, very hot horseradish, worcester sauce and lemon juice. Also, something I learned from my French cajun friends in New Orleans is to suck the heads. The first time I was in New Orleans, my cajun friends laughed at me for only eating the tails. The head is the best part. Here's a story about the practice: houston.eater.com/2017/4/6/15197940/sucking-crawfish-heads-yes-or-no In Texas, we'd have crawfish with corn on the cob and hush puppies, a very simple type of fried cornbread. Where I live now, I can only buy frozen crawfish, it's not the same. I loved the video, Amber looks in fine form.

Hello Dustin James, and how are you good sir? Nice vid! I posted a comment on mikes, but figured you were actually more likely to see it, and seeing as you've imparted so much knowledge to me, it's a pleasure to be able to return it for once. If you grab the middle fin on the tail, break it (with a twist and bending) you can pull the gut sack right out. Quickest and most efficient way. The remove the rest of the shell and you're left with the tail intact but without the crap, literally. You also have the brain butter, which some consider the best bit! Would be happy to see more of these. maybe crayfish trapping, and maybe making the traps from nature just a thought. haha. Till next time, brother.
