Today we went fishing, crab snaring, and poke poling on HMB jetty. We didn't have too much time out, but on our last cast we were able to snare a Dungeness crab!

Ingredients: 3 crabs worth of shells, 1 celery stalk chopped, 1 large yellow onion chopped, 3 garlic cloves chopped, 2 carrots chopped, mushrooms chopped, 3 tbsp tomato paste,1 cup white wine, water, 1 shallot chopped, 2 tbsp butter, 3/4 cup white wine, 1 1/2 cup heavy cream, 3 cups crab stock
Crab Stock
1. Cook the dungeness crab and remove meat, set aside both shells and meat
2. Cook down chopped celery, onions, carrots, mushrooms, and garlic
3. Add in tomato paste and continue cooking until darkened
4. Add crab shells and stir together until shells are somewhat coated with the paste
5. Add white wine and water until the liquid is about 1 inch higher than everything in your pot
6. Bring to a boil and let simmer for 1-2 hours (the longer you can the better)
7. Add salt to taste and then strain your broth
8. Use immediately or cool and refrigerate/freeze stock
Crab Bisque
1. Cook the chopped shallots and 1 tbsp of tomato paste in butter until paste has darkened
2. Pour in crab stock and wine, cook until liquid reduced by about half
3. Add in half the crab meat set aside from before and blend until the mixture is smooth
4. Add heavy cream and stir
5. Add in remaining crab or just eat it on the side
