This week, we visit Cloverfield Organic Farm and make some hearty soup to warm us up from the cold and rainy weather! This recipe is a great way to incorporate some healthy greens in a delicious meal. Feel free to use more or less of each ingredient, or even try your own unique version of it!
Thank you Michael and Susan at Cloverfield for showing us their land and taking the time to explain and describe everything they grew there!
Soup:
Ingredients: Lancinato kale, Fava bean leaves, Bacon, Sausage (sliced to desired thickness), Mushrooms (sliced), Chicken Broth (2 cups)
Directions:
1. Slowly cook bacon over low heat to render out all the fat.
2. Once bacon is cooked and crispy, remove and set aside on paper towel.
3. Take sausage and cook in bacon fat until browned.
4. Take sliced mushrooms and cook with sausage still in pot.
5. Once mushrooms have cooked down and shrunk, pour in a little bit of chicken broth to deglaze pan.
6. After pan is deglazed, pour in remaining chicken broth as well as kale and fava bean leaves.
7. Turn heat to medium/high heat until boil.
8. Once boiling, lower heat until pot is simmering (low/medium heat) and leave on simmering for 35 minutes.
9. While you're waiting for the soup to finish simmering, chop up bacon.
10. When simmering is done, sprinkle on the chopped bacon for some crunch (or also leave whole to act like a really unhealthy breadstick for your soup).
13. Enjoy!
