Ingredients for 8-10 pieces
🥛 Milk: 125 ml, warm
💧 Water: 170 ml, warm
🫒 Oil: 60 ml
🍬 Sugar: 1.5 tablespoons
🌾 Flour: approximately 550 gr
🍞 Yeast: 20 gr fresh or 7 gr dry
🧂 Salt: 1.5 teaspoons
🧈 Melted butter: 200 gr
For the filling
🧀 Cow's cheese: 500 gr
🧂 Salt: 2 teaspoons (or 2 tablespoons of sugar for sweet filling)
If you want a sweet filling, add to the cheese:
🍯 Sugar: 100 gr (or to taste)
🍋 Grated lemon peel: 1 teaspoon
🌿 Vanilla essence: 1 teaspoon
🍇 Raisins: 50 gr (optional, pre-hydrated in warm water)
Method of preparation:
🥛 In a bowl, pour 125 ml of warm milk, 170 ml of warm water, 60 ml of oil, 20 g of yeast and 1.5 tablespoons of sugar. Stir until the yeast dissolves.
🧂 Add 1.5 teaspoons of salt and sifted flour gradually (about 550 gr), until you get a soft and sticky dough.
⏲️ Cover the dough and let it rise for 1 hour in a warm place, until it doubles in volume.
Preparation of the filling:
🧀 Mix 500 g of cottage cheese with 2 teaspoons of salt (or 2 tablespoons of sugar for the sweet filling).
🍯 For the sweet filling, add 100 g of sugar, 1 teaspoon of grated lemon peel, 1 teaspoon of vanilla essence and 50 g of raisins.
Forming the pies:
🔪 Divide the dough into 8-10 equal pieces. If necessary, use flour to make it easier to work.
🥄 Roll out each piece of dough with a rolling pin into a thin sheet, about 0.5 cm thick.
🧈 Brush each sheet with 2 tablespoons of melted butter.
🧀 Place 1 tablespoon of filling in the middle of each sheet.
🔄 Lift the edges of the sheet and bring them to the middle, forming an envelope or a packet. Seal the edges well so they don't come apart during cooking.
Cooking pies in a pan:
🔥 Heat a non-stick pan over medium heat.
🫒 Add a little oil to the pan and place the pies, one by one, carefully.
⏲️ Cook the pies for about 3-4 minutes on each side, until they become golden and well browned.
🥘 If the pies are thicker, cover the pan with a lid to ensure that they also cook inside.
Serving pies:
🍽️ After they are ready, transfer the pies to a plate and let them cool a little before serving.
