Ingredients:
1 tablespoon butter
2 tablespoons diced white onion
1/8 teaspoon ground black pepper
1/8 teaspoon of salt
3 cloves minced garlic
1/4 grated parmesan cheese
2 1/2 cups baby spinach
8 oz cream cheese
12 medium - large Portbello Mushrooms
1-2 tablespoons of Panko Breadcrumbs
Directions
Preheat oven to 375 F
Total cook time: 14 minutes
Cream cheese needs to be room temperature!
Lightly spray baking sheet with oil
Wipe excess dirt off of mushrooms with a paper towel
Remove stems from mushrooms
Place mushrooms tops on baking sheet
Dice up stems, place aside,
Mince 3 cloves of garlic, place aside.
Dice up 2-3 slices of white onion
Melt 1 tablespoon of butter in a pan
Sautee 2 tablespoons of onion,
Minced garlic, and stems on
medium heat for 2 minutes total
Place 2 1/2 cups, baby spinach into
pan and cook until the spinach wilts
Place cream cheese into pan and cook until it becomes soft and smoothed
Mix 1/4 cup grated parmesan cheese into the pan
Season with 1/8 teaspoon of pepper and 1/8 teaspoon of salt
Take the pan off of heat
Stuff the mushrooms with the filing
Sprinkle panko breadcrumbs on top
Place in the oven at 375 F
For 12-14 minutes ( depending on the oven)
or until breadcrumbs are golden brown, mushrooms are soft, and cheese is hot!
