Okay! We're taking a break from the ramen and making a super simple and easy dish, Chinese Braised Pork Belly aka Dong Po Rou. This is a fragrant, meaty, fatty, delicate, melt-in-your mouth comfort dish that you just can't go wrong with!
🍚 INGREDIENTS 🍚

No exact measurements like the ramen this time. Part of becoming a better cook is learning to do things by feel, smell, color, texture and taste.
1 to 2 lb pork belly
kitchen twine
ginger
green onions
garlic
cinnamon sticks
bay leaves
star anise
rock sugar
dry red chili peppers
1 part soy sauce
3 parts shaoxing wine
3 parts water
little bit of dark soy sauce for color
🍚 STEPS 🍚
1) Sear the pork belly skin to burn off any hair.
2) Blanch it for 8 minutes (bc that's a lucky #).
3) Drain & rinse it to cool down.
4) Once it's at a safe temp to handle, cut it into equal sized cubes.
5) Tie the cubes with kitchen twine. This will help it keep shape as it becomes melt-in-your mouth tender and soft.
6) In a wok or pot, lay down a bed of green onions and sliced ginger.
7) Place the pork belly on top,
8) Add the spices & aromatics: garlic, cinnamon sticks, bay leaves, star anise, rock sugar and dry red chili peppers.
9) Add the braising liquid (1 part light soy sauce:3 parts shaoxing wine: 3 parts water).
10) Add a little dark soy sauce for color.
11) Cover it with a lid and lower the temperature to low-medium.
12) Braise the pork belly for 2 to 3 hours and flip it halfway through to cook and color each side evenly.
13) In another pot, optionally add slurry (constarch + water) to some braising liquid to make a sauce. Pour the sauce over the pork belly.
