I made these noodles because my husband requested “the curry with ramen noodles”. It turns out he was referring to a different, but similar, meal. Either way, we really enjoyed this one. It comes together really quickly but tastes like it took hours to make.
INGREDIENTS (makes 4 servings)
- 2 red bell peppers
- 8 ounces baby Bella mushrooms
- 2 cloves garlic
- 1 lime
- Handful of cilantro
- 1 ounce peanuts
- 7-8 ounce ramen noodles
- 1 13oz can of coconut milk (adjust to preference)
- 2 tsp Better than bouillon vegetable base
- ¼ cup sweet thai chili sauce
- 1.5 tbsp curry powder
- Oil
- Salt
- Pepper
- 2 Chicken breasts (sliced; optional)
- ½ tsp sugar (optional)
