Blackened Tilapia and Spinach Parmesan Grits
2 tilapia fillets
1 Tbsp blackened seasoning (recipe below)
3 Tbsp olive oil
½ cup white wine
1 tsp lemon zest
¼ cup lemon juice
2 lemon slices
¼ cup heavy cream
3 Tbsp cold butter, cut into cubes
1 tsp minced fresh thyme (or use ¼ tsp dried)
Prepare lemon zest, juice and slices. Mince thyme. Sprinkle fish with seasoning. Cook fish in hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or until fish flakes with a fork. Remove from skillet, and keep warm; wipe skillet clean. Add wine, lemon juice, and lemon zest to skillet; cook over medium-high heat until reduced by half. Add cream, and cook 3 minutes or until sauce is slightly thickened. Remove from heat, and whisk in butter until melted. Stir in thyme. Spoon sauce over fish. Garnish with lemon slices.
1 cup quick-cooking grits
3 cups water
1 cup heavy cream
1 (3-oz) baby spinach
½ cup shredded Parmesan cheese
4 Tbsp butter
Measure and prep ingredients before you start cooking. Grate parmesan cheese and cube butter. Chopping spinach is optional.
Keep water for grits warm while cooking fish and then bring to a boil when you start to make lemon sauce. When water starts to boil add heavy cream and grits. Reduce heat to medium-low and cook 4 minutes, then add cheese and butter; stir until melted. Add spinach and stir until it wilts.

Blackened Seasoning Ingredients:
1 tablespoon smoked paprika
1 teaspoon cayenne pepper
1 teaspoon chipotle pepper
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1/2 teaspoon ground pepper
1 teaspoon Kosher salt
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
