Today I am making cornbread from corn grown last summer (2023)
Here is my recipe...
2 cups of plain cornmeal
1 1/4 tsp salt
1 tsp baking powder
3/4 tsp baking soda
1 beaten egg
2 cups of milk (buttermilk or whole)
1/4 cup of oil, shortening or lard
Combine dry ingredients first then add milk, egg, and oil. Mix well and pour into a greased skillet, pan or dish and bake in a 450° preheated oven for 15-20 min. until golden brown. Allow to cool for about 5 min. or so then remove from pan.
