Very similar to traditional French "Soupe aux Choux" actually. When I make Soupe aux Choux I like to put thick slices of bread on top of the soup and add cheese to the bread and broil it in the oven (not traditional). The bread that has been soaked in cabbage and pork belly broth with melted cheese on top is incredible. Your version looks really nice too. I've never added potatoes or celery but that sounds really good as well. Well done!

@@123skyhigh5 What I am doing with the cheese on the bread at the end (not traditional to do, but I like it) is very similar to French Onion Soup, that's correct. But the taste of the soup itself is very very different! French Onion Soup also uses more cheese, I just use a little bit. Soupe aux Choux used to be popular with poor people who would soak their cheap hard bread into the cabbage broth to make it soft and edible, but I don't think they could afford the cheese on top.

I don't think you can really sub bacon if you're looking for a vegetarian option. Instead you can look at other umami boosters like mushrooms, and maybe a dash of liquid smoke if you want that flavor.
