Like every Friday, here is the PIZZA recipe, but in a CROISSANT version with a quick method to make them BROKEN on the outside and VERY SOFT inside!
I stuffed them in a classic way with Tomato and Mozzarella but nothing prevents you from stuffing them to your taste!
With these doses of pizza dough you get 2 loaves and you can get 16 croissants, if you want to make less than half the doses!
P.S. this pizza dough (without the pastry) is great for making simple crispy pizzas!

300 g Water at room temperature
1 tsp Dry brewer's yeast
1 tsp Salt
1 teaspoon Sugar
2 tablespoons Extra virgin olive oil
2 rolls round puff pastry
Tomato sauce
200 g Mozzarella
Grated Grana Cheese
Salt, Oregano, Basil
